Mrach eat out of the fridge/freezer/pantry challenge

Tonight is mixed-up chicken files...

Chicken from the freezer
Rice Noodles from the pantry
Applesauce - homemade

I also made a huge stock pot of veggie soup for the month. All fresh veggies (excpet green beans), and very healthy alternative if someone doesnt like the meal or we have a hectic day..


Oh here is the mixed-up chicken recipe in case anyone is curious

1tbsp butter melted in pan, chop one small onion and sweat in butter, add chicken cut into bites and a grate a few cloves of garlic over it... While chicken is cooking make up rice noodles. (Takes 2-4 minutes to cook) and let drain. When chicken is done add to noodles and melt another 3tbsps of butter and soy sauce to taste. Not sure why it go the mixed up name, but it is good.
 
Tonight was slow cooker chicken stroganoff.

Chicken breasts from freezer
Bow tie pasta from pantry
Broccoli and strawberries from fridge
 
Well, the Greek Chicken was not a hit. It was eaten but DH requested I not make it again.

Yesterday I spent about $40 on groceries to help clean out the freezer. Tonights dinner was spaghetti & meatballs with garlic bread. I had the spaghetti noodles, frozen meatballs & white bread & spices to make the garlic bread & I got the sauce for $1 at Big Lots.

I think I'm going to keep the leftover sauce & add some meatballs to it. Then I can make meatball subs for lunches or dinner over the next few days.

Tomorrow is our wild schedule day so we usually eat out. I may try & put something together before we hit the road.
 
Tonight was homemade chicken noodle soup. I had the chicken in the freezer and the noodles in the pantry. I did have to buy the veggies for the soup and bread. I'm using the leftover chicken meat for a chicken-rice casserole on Thursday.
 

Today I am makeing Chilli .. I will have some for dinner and some to freeze when I need a quick meal:banana: .. I used 5 cans of beans. Along with a giant can of crushed tomatoes and some peppers that I had frozen in the fridge. I found some onions and threw that in with the chili seasoning.
 
I'm in! I know I don't have enough for the month, but we'll see just how far I get. I bought a lot of meat last week. H-E-B had a great sale. I will have to buy the fixin's (yes, I'm in Texas and that's a word) but I'm set on meat.
I have 2 roasts, 2 hams, 2 big packs of boneless ribs, 2 packages of chicken wings, and 5 lbs of hamburger. That should get me through at least 2 and a half weeks, so I'll try to make it to Easter Sunday! We are taking a 3 day mini-trip to New Orleans next weekend, so no cooking for me!!!

Doing good so far. Monday night was a hodge-podge. DH had a meatball sub using the rest of Sunday's meatballs. DS had a chicken patty sandwich (found one lone patty in the back of the freezer when re-arranging), a last serving of frozen french fries (I hardly ever buy those so it was a treat and I can't remember how long those were in there!!). DD's was still suffering with spacers, but decided she could chew some pierogies, so I made her a few. I had a double Gardenburger (trying to watch what I eat). The Gardenburgers had been languishing in the freezer for a while, since I am the only one who eats them.

Tuesday night...was gonna make beef stew in the crockpot, but I realized that I would end up with leftovers (which I couldn't eat much of.... too many Weight Watchers points) that DH wouldn't be around to eat. So I changed the menu to Hamburger Soup (got the recipe here on the Dis). I had a pound of already browned ground beef in the freezer (found when re-arranging, as mentione earlier), used my last three potatoes, next-to-last onion, four celery stalks, and three carrots. Threw in the last of the V-8 juice (leftover from the last batch of stew), some watered down spaghetti sauce (last bit left after giving DH the last of the meatballs yesterday), and a can of tomato soup with a can of water. Everything I had in the fridge/freezer/pantry. It didn't have as much broth as the last time I made it, but it was way better! We ate it all except one tiny portion, which I saved for my lunch later this week. Made cheese biscuits with a Bisquik pouch I had in the pantry (bought on clearance at Target for about 40 cents).

DH is away on a business trip, so tonight will be just leftovers, sandwiches, cereal, whatever. DD will probably have a yogurt/fruit smoothie. Braces went on yesterday and she is in pain!

I did have to stop and buy milk and cottage cheese (I LOVE it and eat lots of it, especially when dieting!!).

Hope everyone else is doing well. Sounds like it. Sorry to hear about the DH that didn't like the Greek Chicken. I thought it sounded good. What didn't he like about it?? .............................P
 
3/1 - Baby shower dinner
3/2 - late dinner at my mom's and sammiches at home.
3/3 - Chinese at friend's house, friend's treat
3/4 - leftover Chinese
3/5 - Chicken and dumplings. YUM. With the leftover biscuit dough, I am baking them and using them for breakfast sammiches for the rest ofthe week! This is the first time I have cooked in over a week though ... lol, oops!

I still have tons of mac and cheese to use.
 
Tuesday I made shepard's pie - was suppose to last 2 nights but DH liked it a little too much and had a second helping. So with less than enough for 3 people I figured I would make my son something else for dinner Wednesday. Well I woke up to find DH took the leftovers to work ( in addition to his regular lunch) moo moo!

So anyway - last night I made breakfast pizza with leftofter browned sausage meat from freezer and frozen hashbrown shreds and the rest of a bag of shredded cheddar from the fridge. We have 9 chickens so we always have eggs. We usually have breakfast food at least one night a week.

Tonight I am thinking Chicken Parm w/ pasta.
 
The weather is getting nasty here so we're homebound possibly until Saturday. Tonight I'm going to heat up Salsbury steak & fix mac & cheese & veggies. I think tomorrow is going to be a pizza casserole thing that goes in the crockpot.
 
Last night I made a chicken-rice casserole using the leftover chicken from the soup I made on Tuesday. I had everything I needed for the casserole in the pantry. We had green beans, salad and fruit with dinner.

Tonight we had fish sticks from the freezer, potato casserole and fruit.

Saturday night we just had leftovers. Last night we had chicken kiev from the freezer with rice and veggies. Tonight I'm making pot roast (from the freezer) in the crockpot with mashed potatoes.

The hardest part I'm having with this challenge is not buying meats, etc. that are on sale. This past weekend I saw some really good sales on beef and poultry at the grocery store but told myself I would not be buying anything until most of our freezer is cleared.

Same here, I am not buying another piece of meat until the freezer is cleaned out. I took a freezer inventory and we can eat all of this wek and next week. Tonight is burgers, salad and veggies. I can't believe how bright the freezer is when you can actually see what is in there.
 
It's pouring here in SE Texas, so I think chili sounds good for tonight! We have eaten out 2x since I joined this thread. Once this weekend while we were at MILs (BTW she cooked us lots of yummy free food) and FIL picked up the bill on that, so $0. I had a club sandwich, yum! And then on sunday for lunch we spent $12 for the 4 of us at Taco Bell. We still have a ton of meat!

DH who never eats leftovers has been taking lots of them to work. He really has been a big help in helping me budget for this next Disney trip!
 
tonight was baked ziti. last night was chilli... now thats 2 nights with out meat:goodvibes ...
 
I'm in again this month. Just getting a late start and will end early when I head to Disney World!

Tonight will be - leftover bbq pork chops for ds. I have both ground beef and round steak thawed. I think I will be making a Beef Tortilla bake using the beef, corn tortillas, leftover salsa (sometime I combine jars to get the amount I need), cheese and milk.

I have been bad about buying pork on sale. It has been 99cents a pound for almost every week. We don't need anymore pork but it is such a good price.

tonight I am doing Turkey meat balls with gravy and instant potatoes... also I gave the kids pbj on small dinner rolls for lunch:thumbsup2 and they liked it;) . I think I might throw in some mac and cheese, just to get rid of it:laughing:
