Much of the coffee served at WDW is an instant Nescafe made from concentrate. I don't think it's bad, but it's sure not what you'd call a great cuppa joe.
I would recommend the Kona Cafe at the Poly where you can get Kona coffee in a french press pot. Also the little stand just outside of Kona Cafe has some good coffee. I believe I have read there is some good coffee at AKL.
