Mock Mashed POtatoes?

Hey,

My diabetic husband LOOOVES mashed potatoes, and I want him to be able to have some on Thanksgiving. I have this recipe for "Mock Mashed Potatoes" using cauliflower, and while I like cauliflower I really can't understand how this can taste like mashed potatoes! :confused3

Can anyone, who has had these mock mashed before, attest to them actually tasting like the real thing???

I made some when on the south beach diet and surprisingly they are pretty good...even my kids liked them.
 
We made this recipe a few weeks ago. Other than the fact that I didn't puree the cauliflower you wouldn't know they were in there. (Mine had cauliflower lumps in them.) lol

I've added a food processor to my Christmas list. ;)
 
Believe me, I completely doubted this to, but was very surprised when I made them! While they don't really compare to a great dish of mashed potatos made with cream and butter, they do really act as a substitute. You can add gravy to make them even better.

You do need a good food processor and want to cook the cauliflower until it is soft. I undercooked it the first time and it was "grainy".

Take the plunge and give them a try-- you will be surprised!
 

I thought it was delish. My DH thought it was okay.

It's a good facsimile when you can't have the real thing.
 
I've tried the low-carb recipe you posted, without so much cream. It was surprisingly good. I don't think it could ever be mistaken for real mashed potatoes (especially given the way cooking cauliflower makes your house smell), and I do like cauliflower so I think that helped, but it was sort of the same general idea, KWIM? It satisfied the craving. It's worth a try.
 
I tried it with my family and it was a big no-go. I didn't tell them it was cauliflower. DH took a bite and made a funny face. He was afraid to tell me they didn't taste right. DD took a bite and ran to the sink. She's not afraid to tell me anything.

They make it here at work at the commissary and no one can tell the difference.

They also make it with some sort of a squash and then with a sweet potato. YUCK!
 
I make Cauli mash all the time. DH loves it. I believe the number one key is getting as much water out as humanly possible. After you have cooked the cauliflower and put it through the food processor, then I put it in a very very fine strainer over the sink and mash the pure living daylights out of it until no more water runs out of it. thats how mine stay Super Duper creamy and not grainy at all. They taste very very similar to regular mashed potatoes to us :goodvibes

Here's the recipe I use:

1 medium head cauliflower
1 tablespoon cream cheese, softened
1/4 cup grated Parmesan
1/2 teaspoon minced garlic
1/2 tsp salt
1/8 teaspoon freshly ground black pepper
3 tablespoons unsalted butter

Set a stockpot of water to boil over high heat.

Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well.

In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower. Then strain and mash it in a very fine strainer over the sink until there is no more water coming out of it. Return it to the food processor and blend it with the cream cheese, Parmesan, garlic, salt, and pepper until almost smooth. Serve with pats of butter.
 
I was at the Dr. office a few weeks ago and on their TV was Rachel Ray and some guest on there made them with bacon bits. I made it for my family and they all LOVED it!!
 
Bacon bits sounds really good. I don't use the cream cheese but I do top it with 2% cheese slices and bake it.

It can't. Cauliflower cannot taste like mashed potatoes. I hate cauliflower, and mashing them and adding tons of butter, cream, and cheese to them do make them more palatable; but they still do not taste like mashed potatoes.
 
Sorry, I forgot to quote. This is answer to the PP.

Diabetics have to really watch their carbs, even more so than sugar. So while he could probably have a small amount of mashed potatoes, it wouldn't be a lot and it would mean he couldn't eat any other carbs. If you really loved mashed potatoes, the piddly amount you could actually eat may feel like torture!

I've made these while low carbing, they're not the same but they're pretty tasty in of themselves and can help hit that potato spot :)
 
You can also try mixing a tiny bit of mashed potatoes with a whole lot of cauliflower. I love it this way. I also love it with pasta. I guess I just love cauliflower.
 
I tried to make the mashed cauliflower so my family would have something a little more healthy than mashed potatoes. If I add cream cheese, parmesan cheese, butter and bacon then I have defeated that purpose and I may as well just make the potatoes. At least I can make those with skim milk and very little butter.
