mmm.. Chocolate Fudge Brownie Mint Pie

I made this today for a friend's birthday - easy and really good. I had to share it.

Make a single pie crust. (don't bake yet) Mix a batch of brownie mix according to package directions. Unwrap and chop a box of Andes Mints (I think the box was about 4.5 oz) save some for garnish and add rest to brownie batter. Pour in pie shell and bake 350 for 45 minutes.

It's very rich so one pie makes about 10-12 servings. Top with ice cream, hot fudge sauce, and extra chopped mints.
