midnight buffet and kids and bedtime schedules

I am wondering about a few things. First of all, is the midnight dessert buffet really at midnight? I have two kids aged 6 and 8. I don't want to keep them up that late but I'd like to maybe try the buffet. What do you do in that case? Take turns at the buffet while your spouse babysits? Also, what about if you want to go out and dance or something with your spouse. Do you just put the kids in the kids clubs? Do you adjust the kids sleeping schedules while you're on the cruise?
 
My children are older now, but when they were younger, I would start to adjust their schedule at home a few weeks before vacations. This allowed them to stay up a bit later and sleep a little later.

There are many fun things for the children to do after dinner, so it's just an option.

I think they put the food out before midnight, but it's still late.
 
I've heard that it's quiet time in the clubs after 10 or so...they have the kids watch movies and hopefully fall asleep!
 
Even at 12 or1 in the morning I literally had to drag my 3 yr old DD out of the club. I would try to adjust their schedule before you go.
