Is Mickey and Minnie's Runaway Railway going to be a roller coaster (which I dislike) - or a nice no jerks or downward slopes ride, like the old Movie Ride ?

It would be our first choice for FP+ tier 1
We go to WDW in November 2020

We would do Tier 2 FP+ for Toy Story Mania then eat at the Character breakfast at the BW then do the Beauty and the Beast Show for 1 PM and ......
Then find a seat at Indiana Jones - since it can be cancelled because of weather and it is a large audience area
We will be done with DHS for our vacation - we do not do Star Wars

We could even FP+ Indiana Jones after our first FP+ for a 3 PM show

After our DHS morning and early afternoon - then take the boat again to EPCOT and see what is available

This all depends on....

There is no height limit, so I don’t think it’s a roller coaster.

It's not a rollercoaster - however, it is not a super slow zero jerks ride like The Great Movie Ride. It uses trackless ride technology which means you really don't know which direction you are going to move next. It can spin, it can turn quickly, it can do pretty much whatever it wants within the room. That being said, it is a ride for the whole family and I doubt you'll have any issues with it. Take a look at something like Ratatouille Paris or Winnie the Pooh Tokyo on YouTube to get a sense of what a trackless ride can be like.

As far as "We don't do Star Wars"... even if you don't want to go on the rides I highly recommend taking 10-15 minutes and just walking through the land. The design and level of immersion is beautiful in a way similar to Pandora over at Animal Kingdom. Just pretend it is Indiana Jones and you'll love it (lots of rocks!)

We could walk around Star Wars land - I may have to watch some YouTubes about Star Wars - I really did not follow it when I was a kid :)

Galaxy's Edge is so immersive and beautiful, I have a feeling it won't matter that you're not a Star Wars fan. It's really impressive.

Since mickey and Minnie's railway opens in less than a month, it might be best to check back then to ask about it. I'm sure people can give you a better idea after they've experienced the ride.
And even if you've never been a star wars fan, I can't imagine skipping a ride that so many people are raving about.

It is a trackless dark ride, very similar to Ratatouille and kinda sorta similar to how Great Movie Ride was. Not anywhere near a thrill ride. Think slow moving through screens/scenes.

Remember, pirates of the caribbean has no height requirement but it has two drops.

roger rabbit at Disneyland is not a roller coaster, nor does it have a height req, but its a high speed ride.
Height reqs aren't everything

Not who you quoted, but regardless, it is not a roller coaster.
