The only thing my family is interested in at HS that I don't have a fastpass for is MFSR - and the boys want to do Jedi Training. What should my strategy be to get those things done? I have 2 days at HS if that makes a difference. Thanks!!

You could always try for 4th FP after you've gone through the other 3. You can keep trying to update one of your other Tier 1's. You can wait until evening just before closing.

Jedi Training also has several show times and I've read it's easier to get a spot than it used to be. So you could try rope dropping MFSR & then heading over to sign ups. Though since a solid chunk of people probably head to MFSR in the morning, this would probably be the last option I would pick.

Go to Jedi training first thing for sign-ups - they start signing people up before the parks open. Both times we went last week we got there around 7:40/7:45 and were through by 7:59 (a bit stressful trying to answer the cast member's questions and keep one eye on the second hand...). On both days we were there the only time that was fully booked was the 9:40 show. Getting Jedi training should be no problem. For Millennium Falcon, it seems like the lines get shorter in the afternoon, so I'd just probably plan to ride standby, wait around 60 minutes, and have the Play Disney Parks app or something on hand to entertain the kids.

They told me recently that they try to start jedi training sign ups at 7:30am every morning now. We headed there first once in the park.
If you're able to stick around all day, wait times do go down at night. I never could grab any extra tier 1 FPs in park while we were there, though I'd obviously still try anyways. ;)

unless you can get there super early, i would not attempt to rope drop MFSR. it's just crazy.
Go to Jedi signups first thing, then wait till late afternoon or night time and hop in MFSR queue.
