No Mexican BUFFETS of any kind anywhere on Disney proper that I can think of. There are two Mexican restaurants in Mexico and a QS, but none of them have a buffet option.

The Pepper Market at Coronado Springs I think used to be a lunch buffet, but I believe it is no longer.
