Metro New Orleans DISers - check in!!! - Part II

Mary - This recipe was recently posted on the WFD thread and I'm going to try it tomorrow, everyone that's tried it has raved about it:

Charred Corn Relish

4 ears shucked corn
Cooking spray
1/2 cup diced red bell pepper
1/2 cup halved grape tomatoes
2 tbsp finely chopped red onion
2 tbsp thinly sliced green onions
1/2-1 chipotle chile, canned in adobo, minced
1 tbsp fresh lime juice
2 tsp canola oil
1/4 tsp sugar
1/4 tsp kosher salt
1/4 tsp ground cumin

Lightly coat corn with cooking spray. Place corn on grill rack; grill 20 minutes, turning occasionally. Cool completely. Cut kernels from ears of corn; place in a medium bowl. Discard cobs

Add bell pepper, tomatoes, onions, and chipotle chile to bowl. Toss well. Combine juice and remaining ingredients in a small bowl, stirring with a whisk. Drizzle juice mix over corn mixture, toss well. cover and chill at least 30 min.
 
Just heard from Kyle, they tied their first game and won their second game today. He's swinging a hot bat lately, which is so not like him, he's 5 for 7 at bats.:yay:

He had me laughing, the coach let them vote on what their plans for this evening would be, either a Reds game or King's Island again. You'd think these baseball lovin boys would jump at the chance to attend a MLB game, um, it was unanimous - King's Island again.:lmao:

Hey I might fix that relish tonight! I can't decide if I'm fixing Aimee's salmon burgers or just grilled salmon for dinner.

I think they are kinda "baseballed out" and know that there's still lots of games ahead so it's a welcome distraction, and I can only speak for Kyle but we do have a family love for parks.;)
 

Sheryl, no, thank goodness I don't have to work the grill tomorrow. I am just going to prepare the burgers and make the topping for the salmon.

Tricia, I am not looking forward to this time for my parents. I am thankful my mom has remarried and will have a little more support, but my dad is not in the best shape and we know he'll be living with someone(either me or my DB in Gonzales) sooner than later. Hugs to you for all this-it has got to be hard. I will have more understanding of this time from reading about Kathy's journey with it and now yours. Blessings.
Thanks Lori. I've been living with Dad since 2001. I knew this day would be coming, but it is still hard.

They sure did, they knew how much he liked to eat so they were always dropping by with some goodies for him, which he always shared with Mom.:goodvibes

My sister (who was about the same age as this woman) said "If they are friends that is kind of strange with a 40 year age difference, but if it is more friends that is just plain ICKY." Glad to hear that Kyle is having so much fun.

I just got my car back, and of course they found another problem (another bad part), BUT they fixed it basically for free!
Glad to hear you are feeling better Lorie, and that the car is doing better too.

I think I'll be looking at assisted living for Bob & I, before I have to worry about my Mom. She's the only parent we have left, but she's doing really well. She had one aunt who lived to 99 & another until 103, and they were both sharp witted til the end. I hope my Mom has those genes!
Sheryl - every time I go look at one of these centers I tell them that I am looking for me too!

TriciaII, you need to write a book. You crack me up with some of your family stories.
Mary - my family does come up with some good stories! I still remember my mother and aunts (7 sisters) talking about having to take a live chicken to town on the bus to trade for groceries.
 
Good morning NOLA.

Yesterday was the day I took Kendall to cheer camp. Talk about a noisy ride there. I had three girls with us and they were so excited and loud. Too funny. :rotfl: We went back last night because they were competiting their home routine. It brought tears to my eyes because that was the first time she wore her uniform and performed with her squad.

Today I'm running around doing all the little things you do before vacation. I have to get the oil changed, go to the bank and grocery. I hope you all have a great Saturday.

Forgot to mention, Kyle's coach told them last night that he's accepted a job as pitching coach with Tulane. There is a small article in today's paper. I'm SO glad Kyle got to play for him this year, he's learned so much from him!
 
Maybe :idea: Kyle can stay at Delgado for two years then get a wonderful scholarship to Tulane and pitch again for this coach.

Arminnie -what type of dog is Breaux and Tchoupy?
Breaux and Tchoupy (Tchoupitoulas) are both american cocker spaniels. Tchoupy was a rescue so I really don't know his parentage 100%. He looks just like a cocker but is really big - might have a little of some other type of bigger spaniel in him too.

Breaux on the other hand - I know his parentage back to great-grandparents. I've even met grandma, mom and dad. And my friends the owners personally birthed him - but he looks nothing like his litter mates. He's cute as can be but looks like he could be mixed - but we are positive that he is not.

Kathy - did the little old ladies just flock to your father? When my uncle moved into a retirement apartment community his wife had to go to a nursing home about a week later.

He went to visit her every day and was just devoted to her - but that didn't keep the ladies from dropping by at all hours!

That reminds me of a funny - my family is always good for a funny story. This is the uncle who finally had to go into a nursing home at about 85. He was incontinent and very forgetful.

He asked me to go by his apartment to get his watch and glasses (which it turned out he already had with him). I was looking everywhere for the watch and glasses, and I found condoms! His wife had been gone about a year - but this 45 year old woman was really after him. We couldn't figure out how a man in his pitiful shape who didn't even know when he had wet himself could have a need for a condom.

The young chick soon stopped coming by once my cousin (a judge) took control of his finances, and she couldn't get anymore money from him.

my dad tried to marry one lady after 10 days there. her family called me very upset because one Sunday they came and saw her then the next my dad was there telling them they were getting married..and that she was pregnant (at 63 years old). yes my dad was rather :banana: at the time....sigh. but it was really funny and I just had to assure her dad was actually harmless.

The Knights won!!!!:cheer2: :cheer2: The other pitcher only lasted one inning and Kyle had to come in, we were down 5-0. Kyle shut them down and we won 14-6! We play again at 5:30 ET. He sounded so tired on the phone, I know these boys aren't getting proper rest. They have bed-check at midnight but God only knows what time they're going to sleep.:rolleyes:

This is now:

Kyle just called, their journey has ended. They lost 8-6 and are headed home tomorrow morning. He said he is so tired and ready to come home and y'all know I'm ready for him to come home so all is good. They had a great week and he had a week he'll never forget!:thumbsup2

I am tired...Everyone just left about 1/2 hour ago from our lunch/dinner get-together. I am just waiting for the dishwasher to finish so I can unload and then load again, then take a nice warm shower. I love having company, but I don't like the clean-up part:rotfl:

We are heading to my Mom's today for a big pot of gumbo. I'll be dropping off Gracie :dogdance: so she gets to vacation in the "country" while we go to the beach.

Kathy what a great experience Kyle had this week. I'm sorry they lost and didn't go all the way but he'll remember this forever.

FloraFauna I hear you on the cleanup. :sad2: I don't mind the cooking or setting up for a party but after everyone leaves and you just look at the mess makes me want to :scared1: . I'm not the type to leave anything for tomorrow. I want all the mess cleaned before my head hits the pillow.
