meeting place between Lakeland and WDW?

Can anyone suggest a good meeting place for two people; one coming from Lakeland and the other staying at Caribbean Beach Resort next week? Both have cars. Would it be easier for them to make a ressie at a resort restaurant and the Lakeland person drive there, or for the person staying on-site to meet the other person off-site, for example someplace in Celebration? They just want to get together and visit for a few hours, the place needs to be easy to find. My first thought is to visit at one of the resorts but that's a long drive for the person coming from Lakeland... Any help would be appreciated.

Champion's Gate might be a good spot.
