Meatloaf Recipe Needed Please

Whilst i was at WDW I ate at primetime and had my first experience of meatloaf, which i loved. So please can you all share your meatloaf recipes / method with me.

MEAT LOAF

1 cup tomato juice
3/4 cup Quaker Oats (quick or old-fashioned, uncooked)
1 egg, beaten (optional)
1/4 cup chopped onion
1 tsp salt (optional)
1/4 tsp pepper
1-1/2 lb lean ground beef
Heat oven to 350 o. Combine all ingredients except ground beef; mix well. Add ground beef; mix lightly but thoroughly. Press into 8x4” loaf pan; bake 1 hour. Let stand 5 minutes before slicing. 8 servings.


This has been around for a lot of years and used to be on the Quaker Oats box. These days I sometimes substitute some or all of the ground beef with ground turkey; however, I still prefer it with the beef.

Also, 10 min or so before it is done, I'll drain the fat off and then coat the top with catsup -- then finish baking.
 
This topic came up a little while ago. Here is the link to the Meatloaf thread. The "recipe" I use is there - I don't really measure.

Do you have the recipe from Prime Time? I got it from Margie J's site, I think.

Meatloaf
from 50's Prime Time Cafe, Disney-MGM Studios

1 lb veal, ground
pinch thyme, fresh or dried
pinch rosemary, fresh or dried
½ tsp black pepper
1 tsp salt
1 egg
¼ c bread crumbs, fresh
¼ c red bell peppers, finely diced
¼ c green peppers, finely diced
¼ c mushroom buttons, fresh, thinly sliced
mushroom gravy (recipe below)

Preheat oven to 350 degrees.
In large mixing bowl, add ground veal. Season with thyme, rosemary, salt, and pepper. If using fresh herbs, chop well before adding. Mix in remaining ingredients and blend well until well incorporated. Place mixture in a standard loaf pan lined with wax paper and sprayed with nonstick spray. Bake for approximately 25 minutes or until internal temperature reaches 160 degrees. Remove from oven and remove meatloaf from pan. Discard wax paper and any excess grease. Serve with mushroom gravy.

Mushroom Gravy
1 Tbl butter
2 Tbl spanish onion, diced
2 tsp garlic, finely diced
2 Tbl shallots, finely diced
2/3 c brown gravy
1 c button mushrooms, sliced
1/3 c heavy cream
black pepper
Heat butter in small saucepan. Add onion, garlic, shallots, and mushrooms. Saute until onions are tender about 5 minutes, add brown gravy and simmer for 5 more minutes. In a separate pan reduce heavy cream by half and add to gravy. Season with black pepper as needed.

HI PixiePower! I agree with Trapped parent's recipe. It's an oldie but a keeper. For a little more flavor add a 1/4 to 1/2 pound of regular pork sausage.:D
 
When all my family was at home, meatloaf was a staple around here. I never had a recipe and would change the ingredients every time I made it. Sometimes I would put toco seasoning in it to give it a Mexican flavor, or Italian seasoning to make it Italian tasting. You can experiment with different soup concentrates. We loved cream of mushroom. Lipton onion soup mix is another one that my family always liked.
There are just three things that you have to add and that is the oatmeal (some people use rice) to soak up the liquid, the egg to hold the mixture together, and of course the ground meat. The rest is whatever you happen to have.
