Meatloaf.... Mmmmmm!!!!!

After last weeks 'meatloaf' thread, I finally had to make one. So, I did for supper tonight. And, it was yummy! the kind of meatloaf even kids will eat.

Here is what I did

Crackers - crushed (bread or breadcrumbs fine as well)
Milk - maybe 1/2 to 1 cup
one Egg
Salt
dash of pepper
slice of onion (MINCED - not diced or chucky)
Squirt of Ketchup
few shakes of Worstershire
dollop of A1 Steaksauce
(Okay - I do NOT measure!!!!)
one pound of excellent fresh ground sirloin
One pound of ground turkey

mix all ingredients, except the meat, until well mixed.
Be forwarned, this looks really gross at this point!!!
fold and stir in the meat JUST until mixed (do not over-handle)
place in small baking dish (one with cover)

Garnish with ring slices of green pepper and onion. (Then it is easy to serve the kids theirs without hearing "Ewwww!!! Theres something green on my plate!" :earseek: )

Baste with a little oil and water
Maybe sprinkle on a little more salt

Bake at 350 for about 20-30 minutes until it really starts cooking and looking done. Then turn oven down to 300' and cover so it doesn't get brown or dry on top. (all the juices and oil and water should nearly cover the meatloaf anyhow.) Then bake for 20-30 more minutes, or until cooked all the way through.

Cool, or let 'rest' for a few minutes so that the meatloaf re-absorbs all of those tasty juices... and Enjoy!

Yummy with mashed potatoes ! :p
 
I need to figure out a low carb replacement for those crackers and I'll make this, it sounds great :)
 
How in the world did I miss a thread on Meatloaf?

I have two favorites: cranberry meat loaf is pretty much a plain meatloaf using eggs and bread crumbs but before you put it in the pan , you fill the bottom of the pan with whole berry cranberry sauce and brown sugar . The cranberry juices bubble up through the meat and when you serve it you end up with a delicious topping.

FIL is a good cook and came across a recipe for pizza meatloaf that we're really enjoy . To the basic meatloaf you add lots of cheese, spaghetti sauce, and a can of chopped mushrooms . Sometimes we even add some sliced pepperoni. the end result isn't too firm but it sure is delicious.

Now that I'm really sticking to the low carb plan, on to have to try a variation without the bread crumbs and possibly using salsa instead of spaghetti sauce.
