Meat Loaf recipes??

Hello All,
A previous thread for ground beef got me craving meat loaf! :rotfl:
I consider myself a decent cook but when I make meat loaf it rarely turns out! The best recipe I have come up with so far is a Mr Food one. I was curious what recipe everyone else uses.
 
I use my mom's recipe which includes Quaker Oats.

1 lb ground beef
1 onion chopped
1 egg
1 cup Quaker oatmeal
3/4 cup milk

Smush it all up and, well, ok, I'm going to make an admission here. I think meat loaf takes too long to cook in a loaf pan so I smush it flatter and bake it in a 9x11 pan. So, it's not really a loaf. :teeth: More like an inch thick meat loaf pancake. When you cook it my way, it takes about 30-45 minutes at 375 degrees.

Mom spreads ketchup on hers before putting it in the oven--I don't really like it that way and we add ketchup individually after it's cooked.

Not gourmet by any means but very satisfying AND I slip some oatmeal into my family's diet. :teeth:

I don't remember the recipe, but go onto foodnetwork.com and look up Tyler Florence's recipe from How to Boil Water. We also made a meatloaf recipe out of the Disney cook book from the 50's Prime Time Cafe. Both receipes were awesome!!! The one from the cook book had chopped red peppers. Very very good. Sorry...I must read all receipes off of a peice of paper and I just don't know them off the top of my head. :earsgirl:
 
I love meat loaf and it is the one thing I have just never been able to make. Most of mine a dog wouldn't eat. I finally found one, Oven Classics from Hamburger Helper, and it was delicious, came with twice baked mashed potatoes, and of course they stopped making it.
 

I don't go by a specific recipe, but my meatloaf is a big hit when I make it! It turns out very moist and flavorful.

I take about 2 lbs ground beef (occasionally use 1 lb ground beef & 1 lb ground pork).

Mix with an egg and a couple of dashes of worcestershire sauce. I use about a half a can of Campbell's tomato soup (I hate ketchup) and mix in with it and save the rest to spread on top. I buy a frozen mixture of diced green pepper, onion, & celery and put over a handful in that. Then I put about 3/4 cups of oatmeal in. Sometimes I add a packet of onion soup mix, but it's not always necessary. Depends on if I have it on hand. Sometimes I substitute soy sauce for the worcestershire.

I form two small loaves and lay some bacon across the top and spread the remaining tomato soup. Bake for about an hour at 350.

I think the oatmeal makes a huge difference! Mmmm.

Mmm...Marseeya, I love the idea of the bacon on top. I'm going to try that next time!
 
Secret's in the sauce, or so they say...

Meatloaf Topping

¼ cup ketchup
2 Tbsp brown sugar
1 tsp dry mustard

Mix together in small bowl and spoon over cooked meatloaf. (I use ground beef, an egg, a few crackers – saltine – and a bit of ketchup.) Bake for an additional 10-15 minutes.


Depending on how big the meatloaf is I'll sometimes double the sauce.
 
I use the recipe on the Lipton Onion Soup Box.
I use tomato sauce instead of ketchup.

I bake for 30 min and then take out and add the remaining tomato sauce and mozzarella cheese and bake for an additional 15 min.

MMMM!
 
1-1/2 lbs. ground beef (or mixture of beef, veal, etc.)
1 egg
1 cup milk
1/2 tsp dry mustard
1 tsp garlic powder (I use a lot more)
1 tsp sage (I use a little more)
1/2 cup bread crumbs
1 small onion chopped
Ketchup spread over top

Think I got it all :rolleyes:

Cook 350 for 1-1/4 hrs.

Sage makes the difference in taste
 
My receipe is pretty much the same. Eggs, oatmeal (or crackers) garlic pepper and ketchup. We do our on a sheet pan also. Makes it so easy for doing meatloaf sandwiches. We call it sheet loaf when we do it that way :rotfl2:
 
I have a good turkey loaf recipe at home-- it's also made with quaker oats.
 
I 2nd the recipe for the one on the back of Lipton's Onion Soup Mix. I pour a can of Campbell's Tomato Soup (mixed with 1/2 can of water) over it. We had it for dinner tonight!
 
no exact measurements--but I will share --

3 lbs of hamburger
1 med onion chopped
then I add :
progresso italian crumbs
parsley
oregano
fresh shredded parm
garlic powder
Lawry's season salt
black pepper
ketchup

mix all together

I make mine about an inch and a half loaf ---

put ketchup on the top and bake

I bake at 300 for about 1 1/2 to 2 hours ---

INGREDIENTS:
1 1/2 pounds lean ground beef
1/2 cup crushed buttery round crackers
3/4 cup shredded Cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
1/4 cup ketchup
2 tablespoons steak sauce

--------------------------------------------------------------------------------

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, stir together ground beef, crushed crackers, cheddar cheese and onion soup mix until well combined. In a separate bowl, stir together eggs, ketchup and steak sauce until smooth. Stir the egg mixture into the beef mixture, adding a little water if necessary. Shape into a loaf and place in a 9x5 inch loaf pan.
Bake in preheated oven 45 to 60 minutes, until no longer pink.
 
I have a great recipe for Pennsylvania Dutch Amish meatloaf. It's awesome. I can get the exact ingredients if anyone wants it. It's ground beef, eggs, milk, green pepper, cheddar cheese (yum!), breadcrumbs and ketchup. So easy, and so good!

I went for making the meatloaf my reg way but added the ketchup, brn sugar and dried mustard-It was delicious!!
Yes I want the Amish recipe! Next time I am going to try one of the oatmeal recipes or lipton soup one!
 
Funny this would come up. I made a meatloaf last night that was very disappointing. I used to make it with Campbell's Golden Mushroom soup. There was a recipe on the label. That was some pretty good stuff :)
 
This is odd I just made meatloaf last night too. I use a recipe from my Cooking with Mickey and Disney chefs. It's my favorite recipe.
