We have used meal vouchers on both our trips to DLRP, and found them excellent. You can choose before you go which voucher you buy, [in february I think they started about 18euros and went up to 25euros]theres basic, medium and gourmet, plus a kids which was about 10euros.
The first time we went you could exchange them in any restaurant at all for either a two or three course meal [depending on the voucher], or as part or full payment for any combination of the menu [ie swap the starter for coffees at the end etc].
The most recent trip was slightly different in that we could exchange them for full meals [i.e. three courses - we bought menu de chef vouchers]at the restaurants listed on the voucher, and there was a choice of about twenty - or use them as part or full payment in any restaurant except the
Disneyland Hotel, which was different from 2003.
We bought one voucher per person per day before we travelled, and ate very well on them - we had ones left over and spent the last day trying to spend them all in Casey's and the Gibson Girl parlour - which really was a waste as you get the best value from them if you exchange them for a full meal. Twice when we were there we picked starter, main course and pudding [ as allowed by the voucher] and when you added up the price on the menu it was more.
For me it took the worry out of budgeting, even if you decide to splash out on a really fancy meal - you can top them up - just be careful for the few exceptions, planet Hollywood, Inventions, Rain Forest Cafe and macdonalds i think........but you can find a complete list and all the details [hopefully] at this site
