The big problem with finding an inexpensive car rental for those dates is that you're picking it up on a very busy holiday. You may find that it would be cheaper to take DME (if staying at a Disney hotel) or even a cab from the airport the day you arrive and relying on bus service until the 3rd or 4th, at which point you should be able to find good rates for the rest of your stay. You can pick up your car at one of the nearby hotels - you don't have to go back to the airport to pick-up your rental. And you can indeed return your car at the airport even if you didn't pick it up there.
