Market Price for Veggie Meals

Len Testa mentioned something I'd noticed while I plan for our December trip. Some places, like 50s Primetime, list vegetarian meals as "Market Price."
Question 1: WHY?? I've never seen this for anything except lobster, and I love my tofu, but it ain't lobster. I know produce can be expensive, but I don't think it varies more than meat--and most of the meat dishes also include veggies.
Question 2: What are the market prices? Anyone in the parks ordered these lately?
 
For the Prime Time, it looks like it's because it's the vegetarian version of the blue plate special, so the dish is different from day to day and the price can change depending on what is actually being served.

I have seen market price on steak and any type of sea food lately. As far as vegetables… places have changed even burgers from X comes with a slice of onion Y for 2.00 more comes with lettuce tomato and onions. I can somehow understand market pricing on using in season… look at the bright side if they put an average price for all you may end paying part of someone who orders next week for an ingredient that is more expensive. As far as other dishes they are not serving seasonal sides. Places that serve seasonal sides adjust menu prices seasonally as well
