Marinara Sauce---Help!

I'm about to make some sauce. I have never made it myself but I want to make chicken parm for dinner.

I found a recipe online which I have all the ingredients for except red wine. Do I have to use red wine or can I substitute with water or broth?

You can make it without red wine.. You can also use balsamic vinegar instead
 
I have a pot on the stove as we speak. I've never uesd red wine in mine. It's basically sauteed garlic and onions in oilve oil then throw in crushed tomatoes with all the spices (herbs, salt, pepper).
Can't give you a recipe since I'm Italian and we just eyeball everything!
 

I've never heard of using wine or vinegar.

I use 2 large cans of whole peeled tomatoes. I use a blender to chop them up. In a large pot, saute one clove of garlic (chopped) and one small onion(chopped) in some olive oil. Add the tomatoes, about a tablespoon of basil and a tablespoon of parsley. Bring it to a boil, then simmer for at least an hour.

That is a quick explanation of my sauce. DH makes a much better one, but that one entails using pork ribs, meatballs and sausage. Mmmmm...

You really don't need it..I just think it's gives it a little something extra.I always get comments on my sauce when I use wine or balsamic vinegar..

Thats about it! If she wants it a little thicker, tomato paste works every time.
 
Dawn--funny you should mention the tomato paste!

My husband insists my sauce never comes out like my mom's. Finally, one day she showed me what she did and the only difference was the little can of paste.

Sure enough, now my sauce is as good as my mom's! (or dare I say it, Better!!)

I eyeball most of everything except when I try something new..then I tweak it.

Don't forget some sugar. It cuts down on the acidity of the tomatoes.

Ok, I just added a 1/2 tsp of sugar. Im not making a large pot of sauce. So far it taste really good!

Im fryng the chicken cutlets now. Do I add the cutlets to the sauce in a baking pan topped with moz. cheese? I do not have that part of the recipe

Thanks, Im thinking about serving over spaghetti noodles. Is this traditional?
