Making reservations for someone else (gift)

My mom would like to gift someone in our family a Disney trip. This will definitely include resort reservations. What’s the best way to go about this? Can she make it in her name and add them to MDE and then delete herself?

The reservation needs to be put in the names of those taking the trip. Lead guests cannot be changed, so your mom cannot put it in her name and change later, but she can pay for it.
 
If you mom is booking online, she will have the option of changing the name of the lead guest to the person she is gifting the trip to when she is checking out. She can then pay for the reservation. She can also call in to make the reservation, but she should not list herself as the lead guest if she is not going on the trip.

No, as long as the room or package is paid in full (package has to be paid in full at 30 days and for room-only reservations, credit card will be run morning of check-in or your mom can call in and pay in full prior to check-in day), they will not need to present payment at check-in. Your mom may want to make sure her cc is not attached to the reservation for incidentals, however, unless she wants to pay for those as well.
