Making my Own Healthy, Low Fat "Frozen" Dinners...Need Ideas

Hi everyone,

I know how to cook, but I hate doing it. I only have to cook for myself so if I'm not eating out, I just eat a lean cuisine, WW Smart One, etc. I'd like to be a little more healthy about those choices since I am also in a constant weight loss struggle. So I'm going to make my own "frozen" dinners - except I'm not actually going to freeze them, just make enough meals for the week - 5 would be good because I'm usually on a different eating schedule on the weekends. So what I want to do is make some dishes that I can prepare ahead, and then portion out into reusable plastic containers. Then for dinner, I just heat it up. Something like chicken breast, some rice and veggies. But I can't eat that for 5 nights - maybe 2 or 3. So I'm looking for some options (healthy) that I can make for myself....suggestions?

Brown rice is easy to freeze, so you can cook a big batch and then freeze it. Steamfresh veggies are quick and easy! Then you just need some various ways to cook/flavor your chicken. Mrs Dash makes a good Chipotle flavor, & lemon pepper. You could make chicken w/bbq sauce, different marinades etc.


easy stir fry:

stir fry sauce (we love the"Iron Chef"general Tsos for chicken and they have agreat spicy one for beef stir frys, they are less expensive at BJ's)
steamfresh broccoli or mixed veggies
chicken tenderloins or stir fry beef strips
brown rice (instant or boil in bag)


throw veggies in micro, stir fry chicken in pan, throw in veggies at the end then add sauce serve over rice.

If you get a few stir fry sauces, you can vary the flavors


Make chili, serve over brown rice with LF shredded cheese on top

Crock pot some beef stew (see crock pot thread :)

Cook on the weekend and then freeze them for the week. :)
 
I make big batches of chili (diet friendly because it is loaded with beans and veggies) and freeze it in small quantities.

Also, loaded bakedpotatoes freeze well and are single serving size.
