My daughter will be joining my husband and I half way through our week stay. Will she be able to use ME from MCO? I will add her on to our room res for the day she arrives if that is an option.

Exactly. OP, as soon as you add her to your reservation when you check in, contact DME or go to your resort concierge with her flight info and you can set up the transfers for her.
