As it will be Thomas and Charlotte's 7th Birthday on Sunday 13th of July I was wanting to take them to the Magic Kingdom. However, because it is an EE day for Disney guests, which we are not, is it really going to be too crowded or will it still be enjoyable as we aren't going to try and do everything just enjoy the atmosphere and their special day.

Grandad, who lives near Boynton Beach will also be spending the day with us, first birthday he will have been part of.

From experience when the old EE days were in place these were always regarded as the busiest day for the EE park. So I would assume it would be busy. That said a lot of the Disney guests would tend to go to the park early and take advantage of EE then leave that park but it would be a risk to assume that the park may thin out later in the day.
 
Historically the EE park is the busiest park on the day but I would recommend arriving for park opening for the general public, heading to City Hall to get them their birthday buttons and then making your way to Fantasyland asap - it does get busy after 10.00am.
Perhaps when you've been to City Hall, you could take one of the Main Street vehicles e.g. a horse-drawn trolley, up to the Castle, and then go through the Castle into Fantasyland. If it is already quite busy, get a Fastpass for Winnie The Pooh or Peter Pan and experience something else.
How about making a Priority Seating for lunch too? If they like Winnie The Pooh & friends, book the Crystal Palace. After that, you could walk into Adventureland from the CP, get Fastpass for the Jungle Cruise and experience Pirates whilst you wait!
If you are happy to take your time, use Fastpass for all the headliner rides and maybe leave out rides with overlong lines until another day, you can enjoy the atmosphere of the Magic Kingdom and have a great day!

I have always heard mention of "the busiest days are the EE ones"... but I have yet to notice an appreciable difference certainly in the late morning / mid afternoon. I think the biggest determinant of how busy it will be is the time of year you visit, not which day of the week. Here I go being controversial again!

On our recent trip, we didn't notice that it was any busier on EE day's. But that may be different in the summer months :D
