Hello everybody!!!! We are a family with two kids aged 7 and 5 years old. Being our first time in Disney I do not know when is the best day to go to MK. We arrive on Sunday and I would like to know your opinión if it is better to go to MK on Monday or wait till Wednesday with the EMH at night. If I go Monday I could go to AK on Wednesday and hop tu MK at night, but I guess that might be to hard for the kids.
What do you think?

I think for little kids, the quintessential park is really MK. For that reason, I'd save it for later in the trip, so there's more of a build up. If you're going to park-hop, just be sure to get them back to the room for a nap mid-day.
 
Since you can't get FP's initially for more than one park, I'd be sure to begin in Magic Kingdom, making my fast passes there 60 days out, then hop to another park like Animal Kingdom where there are more shows or things to do that you don't need fast passes for, or Epcot, where fast passes for everything but Frozen are easier to get.

How many park days?

We usually do 5 park days. We start with MK, then we hit the other parks, and we end with MK.
 

EMH usually makes for larger crowds at a park on any given day. Taking advantage of AM EMH is smart if you can hop to another less crowded park when crowds start to build by lunchtime. PM EMH extends the day - but as everyone is already in the park, there is usually little benefit unless it is very late (like 1 am or after). As a first trip - please DO study up here on FP+ and refreshing, and please DO wake up early for rope drop. Unless, of course, part of the magic is standing in long, slow moving lines for your family :) Welcome to the boards!

We travel the last week of april and the first of may. 5 park day with hopper plus and the idea was MK the first and the las day. We stay at Disney Pop Century.

If you are planning to Rope Drop, then it really wont matter too much. Monday April 27th will be the most crowded at MK for your entire week, but it still shouldn't be too bad. That is a good week to be there IMO. End of April / Early May typically has light crowds. Post spring break and pre school getting out. Also, if you are planning another day at MK at the end of your vacation, on Friday 5/1, that day will probably be fairly light (all things are relative, right?).
This is typically what we do, regardless of crowds. We go to MK the first and last days, and do all the other parks in between. This year we added an extra day so that we can have 2 HS days as well. Have fun!

I usually do the opposite since MK is by far the easiest park to get lots of really good FPs same day.
 
Wholeheartedly agree with doing MK first - we always, always hit it first because as said above, it just *is* Disney and I can't imagine starting anywhere else. Especially with kids that age!

Wednesday 4/27 is evening EMH which typically doesn’t affect the crowds all that much during the day.

Mondays are typically the most crowded days as many people come in on Sunday for a full week.

I think the crowd level for your Monday is like 6, and the Wednesday is a 5. I’d still do MK on the first and last days. You won’t notice much diff.
 
Congrats on going on your first trip to WDW. Your children's age of 5 and 7 are a perfect age for a first visit, IMO. Our children were 5 and 7 and they loved it all! Like others, I would start with the MK and end with it for a repeat of your favorite things.
As far as crowds, I would check with crowd calenders (I use Kenny the Pirates). They can be helpful but not always entirely accurate. They at least give you a good idea of why there might be more crowds, or less crowds. There are other good ones out there too and they have good information on crowds. You will have a great time at WDW for your children's first visit!
