Made Boma's Chicken Corn Chowder...

and it turned out great! Really perfect for the nasty weather we've been having. I've never had the original, so I don't know how it would compare, but I was proud of myself. The only problem was that I made twice the amout in the recipe so I could freeze half and save it for later - but when I thawed the remainder out it had turned to more of a potato mush than a soup - the potatoes just sucked up all of the chowder. So instead of eating it as a soup, I put it in some oven dishes, baked a flaky biscuit on top and called it Chowder Pot Pie. Still delicious!

Chicken Corn Chowder


Serves 8
Prep Time: 2 hours
From Boma – Animal Kingdom Lodge

Ingredients
2 chicken breasts, cooked and diced
1 pound russet potatoes, cooked and diced
2 cups corn kernels, frozen
1/8 cup onion, diced
1/8 cup red bell peppers, diced
1 cup chicken stock
1 cup heavy cream
1 cup milk
2 teaspoons sugar
2 teaspoons hot sauce
1/8 cup fresh parsley, chopped
1 chicken bouillon cube

1. Bring chicken stock to a boil.

2. Add milk, heavy cream, chicken, potatoes, red peppers, onions, corn, and sugar. Simmer for 40 minutes.

3. Add parsley and hot sauce. Simmer for five minutes.

4. Serve hot.
