Is there a major difference if you were to have a late lunch vs a dinner at any of the restaurants? Say EPCOT restaurants, do they have the same menus for lunch as dinner?

They are generally the same, with possible minor exceptions.

I know Le' Cellier doesn't offer Prime Rib at lunch, but the rest of the menu is identical.
 
IMHO.... The menu's are different...

Le Cellier's lunch & dinner menus are slightly different, and lunch prices are a little less than dinner.
 

I would definately check the menu's the online reservation site also has many of the menus. I noticed slight differences and I would say on average the price of lunch is roughly $10-$12 cheaper than dinner. I had early dinner ADR's and changed to lunches after looking at the menus and prices.
 
While appetizers and desserts tend to be the same, about half of the lunch and dinner entrees are different at Le Cellier, Les Chefs and Tutto (for example). I did a comparison for those restaurants when I was trying to decide if I wanted to make lunch or dinner ADRs. As others have said, check allears and the Disney site for the menus.
