Thanks everyone! You were a huge help. I knew you'd help me straighten out my thinking. We went with the popular vote and chose Liberty Tree Tavern. As many of you pointed out, with my mom's mobility issues it makes sense to stay in the park for lunch. I noticed that the majority of the rides we're doing are in Fantasyland, Frontierland and Liberty Square -- which keeps us in that general LTT area, so that cuts down on some steps.
When we leave the park, if my mother is up for it, we'll then hop on the monorail and head over to the Grand Floridian and see the Gingerbread House.
I'm definitely putting the Grand Floridian Cafe, The Plaza and the Kona Cafe on my must-try lists, as those were popular choices, as well.

I am traveling to Disney in December with my parents (in their 60's -- my mother has mobility issues and can't do a lot of walking), my husband and my 7 year old DD. This is my parents' first trip to Disney World ever and I want it to be great. I'm trying to come up with a lunch plan for our Magic Kingdom day.
We could stay in the park. If so, my choices are:
The Plaza
Tony's Town Square
Liberty Tree Tavern
We could take a mid-day break from the parks and take the boat over to the Wilderness Lodge to see the Christmas decorations. If we do that, my choices are:
Whispering Canyon Cafe
Artist Point
We could take a mid-day break and take the monorail around and stop and see the Gingerbread house at the Grand Floridian. If we did that, my choices are:
Grand Floridian Cafe
Kona Cafe (at the Polynesian)
Gasparilla's Grill (quick service)
The restaurants I listed are the only ones left with ADR's available.
