Does anyone have an easy zucchini casserole recipe? I'm thinking maybe with onions, bread crumbs, some kind of cheese, etc...
 
Sandy, this is my favorite zucchini receipe. If you didn't want sausage in it, I suppose it would still be okay, never tried it that way.

SCALLOPED ZUCCHINI

2 LB. Zucchini
l lb. sausage
1/4 cup chopped onion
1/2 cup crushed saltine crackers
1/2 cup parmesan cheese
2 slightly beaten eggs
1 teaspoon salt
1/8 teaspoon thyme
garlic salt, pepper

Scrub squash & trim off ends, do not peel. Cook whole covered in boiling salt water for 15 min. or until tender. Drain thoroughly. Chop zucchini coarsely (should be about 5 cups).

In 10" skillet cook sausage & onion until sausage is browned & onion tender.Drain. Add squash & remaining ingredients except 2 tablespoon cheese. Mix well. Turn into 1 1/2 quart ungreased casserole, top with reserved cheese. Bake 350 degree for 40 min or until set and delicately browned.

I use quite a bit of garlic. If you think it would be too salty you can use garlic powder.


Everyone in my family likes this, even the grandkids.
 
This isn't an actual recipe....just what we used to throw in the casserole.
Layer zucchini, tomato & onion in a greased or no-stick casserole.
Add a layer of mozzarlla cheese.
Top with bread crumbs. (I usually used Italian crumbs.) You end up with a pizza-flavored casserole....kind of.
