Looking for TS recommendation

I'm *keeping fingers crossed* heading to WDW in November to celebrate my birthday this year. We're getting the QSDP (no PH on the tickets) and have a rough itinerary of how to maximize the use our our credits. There is one meal that we'll need to pay OOP and I'd like that to be a TS. Initially, I was thinking of someplace in Epcot but now that SWGE is going to be open sooner than anyone expected I'm wondering if my Epcot day would be better spent in HS (so we'd have 2 HS day).

Original plan:
Arrival day- Epcot (TS here)
Day 2- HS
Day 3- MVMCP (actual birthday)
Day 4- AK

Somewhat new plan:
Arrival day- HS (maybe TS here)
Day 2- AK
Day 3- MVMCP (actual birthday- maybe TS here)
Day 4- HS

So now I'm confused as to where I want to fit that TS meal in. I've eaten at most of the HS TS restaurants already, but HBD is on my to-do list at some point. On the other hand, there's just something to be said about celebrating one's birthday at CRT, but I don't necessarily want to waste party time eating. I'm not opposed at all to eating somewhere at DS for lunch that day, so maybe there's something there I haven't considered.

All this to say....what day would you plan your TS for and what restaurant would you recommend?
 
I wouldn't schedule the TS during MVMCP- your paying for the party, I wouldn't want to cut it short by being stuck waiting for and eating a TS meal.

I don't care for any HS TS restaurants so that would be out.

I would probably schedule my TS at DS (Morimoto) or Epcot- somewhere around the world showcase. We had an excellent meal at Le Cellier on our last trip- I almost canceled it due to recent reviews I've read but it was the best meal of the trip and I'd definitely do it again.

Another idea would be at a resort - you could get an early CA Grill reservation then walk over to MK for MVMCP.

I would do a table service in DS on the day of your party around 2ish and then bus over to the Contemporary to go to MK for the party
 
Since you'll be at a party @ MK on your actual birth date and HBD is on your bucket list, I'd opt for HBD on arrival day.
