My friend just got back from a trip. Her family was able to get a table at Ohana for breakfast, and everyone LOVED the pineapple coconut bread there. I thought it would be fun to get her a cookbook that had a recipe for the bread in it. So I'm looking for a recommendation. I've tried looking but haven't had any luck, and hoped someone here might know of one.
 
I don't know of a specific cookbook that includes it but there are several versions of the recipe "out there" on blogs and YouTube. Maybe instead of a cookbook you could get her the ingredients to make?
 
If you google "O'Hana's pineapple coconut bread", you'll find several recipes.
 
A lot of the so-called 'copycat' recipes you can find online are poor imitations of the real thing. Many will even say they have never tried the actual product but then give you their recipe for it...........how can that even be possible? If Disney published a cookbook, then you are more likely to get something like the real thing. Some of the signature Disney recipes you aren't likely to find since they want to keep it a secret as a reason to attract more people to eat there.
 

I would check the blog. I know during covid they were publishing some of their marquee recipes, like the cheddar cheese soup from Le Cellier.
