Made this for a scout dinner this past fall....was great!!!
Zucchini Casserole II

Ingredients
6 cups zucchini, sliced
1 cup water
1/2 cup onion, chopped
1 can cream of chicken soup
1 cup sour cream
4 ounces cheddar cheese, grated
8 ounces stuffing mix
1/2 cup butter, melted
Directions
In a saucepan, cook sliced zucchini in boiling water until just tender-crisp, about 3 to 5 minutes; drain well and set aside.
In a bowl, combine chopped onion, cream of chicken soup, sour cream, grated cheddar cheese, stuffing mix, and melted butter. Toss to combine. Place half in the bottom of a buttered 1 1/2 to 2-quart baking dish. Place the zucchini on top. Cover with the remaining stuffing mixture and bake at 350 degrees for 1 hour.
