Looking for 2 things

Firstly, I am making a ham tomorrow night and have never been able to find a really good scalloped potatoes recipe. Does anyone have one??

And I am also looking for some good make ahead and freeze recipes. I just found out I am expecting #2, and want to have the freezer stocked before he/she arrives in Sept.

If you try http://www.bbcgoodfood.com/ you should be able to search for freezable and make-ahead dishes. There is also a good potatoes dauphinoise recipe. Anything nice and "wet" - stews/casseroles, soups etc - usually freezes well. If the recipe calls for cream substitute creme fraiche (half fat is fine) and it will freeze OK. I make double quantity fish pie and freeze smaller portions for later, also lasagne. And if you make up a large quantity of bolognaise you can freeze it in individual portions and bung it in the microwave while you make the pasta, or add it to a jacket potato. Pasta bakes are also OK, pies, cobbler etc. but they need to be well covered. You can also freeze chicken portions in a marinade so they marinade whuile they're defrosting.

There is a great cookbook, called The Warehouse Gourmet. The concept is to assemble the meal, freeze it, thaw it, and cook it. The "cooking" part is generally very easy. It is my new favorite cookbook. It is very easy to customize the entree sizes, to meet the needs of your specific family.

I also gave this cookbook to my niece who just had triplets!

The great part of this for me is - I add to our freezer when the meat is on sale. Plus, you'll get a great feel once you do this a little bit, on how you can do this concept with your favorite recipes.

We grill out lots of the recipes...DH does that, and it really eliminates pans to wash at the end of dinner.
