I'd like to share with you a recipe that I've found is quite good!
Lite Pineapple-Cheese Bread Pudding
Makes 8 Squares
4 slices whole-wheat lite bread
8oz can crushed pineapple in it's own juices
1/2C Egg Beaters
1/2C Fat Free Ricotta Cheese
2 tsp. Vanilla extract
1 tsp. lemon extract
1/2 tsp. ground cinnamon
2C Fat Free Milk
8 tsp Splenda (or other artifical sweetner)
Non stick cooking spray
Set Oven to 350F
break bread into small pieces
Spray an 8x8 baking pan with cooking spray
distribute bread evenly in pan
Spread Pineapple-including juices-evenly over bread
In a food processor, or blender;
combine remaining ingredients process until smooth
Pour mixture over bread, let stand 5-10 minutes
bake uncovered 40 minutes or until completely set.
Chill completely, cut
Per Serving-(approximately)
Calories...80
7g protein
20g carbohydrates
Less than 1g fat
I've found this to be very tasty - you can adjust the sweetness by changing the amount of Splenda you add. I've found it important to let this chill completely - before cutting.
