If you go to the official Disney website, under Guest Services, you will find a link to a page about WDW for Guests with Disabilities. My old link doesn't work and this computer that I'm on does not have the most recent versions of browser software, so I can't access it.
But, another place you can find the information is on the park maps. The rides with "cautions" are marked with a red traingle icon. You will also find signs at the beginning of the queue and before boarding.
