I love greens, have since I was a kid. My favorite is arugula. I use it as a salad base mostly, but also as a sandwich filling, and burger and pizza topping (after its cooked). I also enjoy spinach. I like that for salads as well, but also lightly sautéed with garlic and pepper in olive oil. I also use spinach in my frittatas and omelets. I enjoy kale raw and sautéed, as well as Swiss or rainbow chard, but that I always cook. I eat others as well, but those 4 I eat most often:)

I like:
Broccoli - usually steamed or in a stir fry.
Zucchini - in stir fry, sauteed with an omlette or grated and added to things like bolognaise sauce.
Baby spinach - raw in a salad or sautéed with an omelette.
Snow Peas - I love these raw (nice and crunchy) or in a stir fry.

Other than that ... nothing exciting going on.

Aaahh I know how that feels - my extended Easter break is fast coming to an end now and I really feel like I could have another week off! Sorry the weather is not co-operating with your exercise plans :upsidedow
 
Love a lot of green veggies - favorites are probably asparagus, zucchini, and cucumbers.

Asparagus we usually roast with salt/pepper. Sometimes we'll just blanch it quickly and cool it off, goes well with a ranch or blue cheese dip.

Zucchini we normally sauté with squash in a little olive oil or I'll do them on the grill.

Cucumbers are one of my favorite snacks - just go raw with some light ranch dip. We always have some cut up and ready.
 

2 - Exercise Tracking Spreadsheet - this is something I started a few months ago. I plan out which days I will be doing what exercise, and then when I do my exercise, I enter the information into the spreadsheet. I keep this in Google Sheets so that I can access it from anywhere, and I start a new spreadsheet every month (each month's spreadsheet will have 4-5 charts - one for each week).

This is awesome! Both of them are awesome! Do you mind if I ask what your low intensity workouts are? I'm trying to come up with a better game plan for myself to balance running/cross training/strength training/etc. and so I was just curious what your low intensity work outs are.

Lettuce - salads! I prefer a delicious ranch dressing but for a healthier option I do a tsp of oil and a tsp of vinegar. I do white vinegar because balsamic is not my thing!
Asparagus - I roast it with minced garlic and then sprinkle a little bit of parmesan on top

I'll eat various greens. Green beans, broccoli, cucumbers, green bell peppers, but I don't really "crave" them. I wish I did!

Love the tie-in with the greens!

A favorite green of mine is artichokes! I usually steam them (in the microwave if I'm feeling lazy) and eat with either some drawn butter or coconut oil and lemon. Growing up I dipped the leaves in ranch and/or mayo.

A second favorite green is broccoli - roasted or steamed is my favorite. Not too fond of it raw. I prefer it with just some salt but my boyfriend drizzles peanut sauce if we're eating asian food.

Another is okra - I don't eat enough of it really because I don't really cook it myself. But my grandma makes it for me as she knows I LOVE it! It's more of a main dish for us. I usually eat it stewed with tomatoes and garlic. We do also add tender meat chunks. It's incredible and probably one of my favorite dishes of all time.

I love lettuce, zucchini, asparagus, broccoli. I love zucchini and asparagus roasted but I have never roasted broccoli. I do like cucumbers too.

This is my day off. I just found out that I will be teaching a summer course at the university but only if another course runs. If the other course doesn't run then the course I am scheduled to teach will be taught by the person. Fine with me I was just doing it for the money. With 4 weddings coming up any money will help.

Dh has been busy with stuff for his mother's estate. Tonight he is getting a market analysis of the house. We think his sister is going to buy it since she is still living there but we are worried that her partner may be wanting to low ball us on the price. We will see where that goes.

I have a list of sewing things that need to get done. I need to rip some seams out of mermaid skirts for a local production of Little Mermaid so that we can add a little more pizzazz to them. Then I need to cut out squares for my son's wedding quilt. I am just now adding colorful corners to the white squares so people could sign them at the wedding instead of a guest book. Then I can put the squares together after the wedding. I also owe a friend's daughter a baby quilt.

Off to get some things done.

Usually my low intensity exercise is just walking - either walking around the neighborhood or slower speed walking on the treadmill. I'm pretty boring. I used to like Leslie Sansone's Walk Away the Pounds videos, but I got bored of them after a while.
Although sometimes I will count dancing around my room as a low-intensity workout.

Good question!

1) Spinach with strawberries, feta, and sliced almonds with a poppyseed dressing (this is a pre-made salad at Fresh Market near me that I now imitate at home)-- DELISH!!!!
2) Roasted zucchini (or squash or asparagus)-- thin sliced, lightly tossed with olive oil and seasoned garlic and lemon pepper!
3) Steamed broccoli

I love broccoli. It has to be cooked though. I also really don't care for frozen either. I will eat it if I have to but would rather have fresh broccoli. I just steam them. nothing special.

I am a really picky eater but the past few years I have been trying some new things. My sister is pickier then me and when I saw her eating asparagus I had to try it. If she likes it I must like it too. So I tried and I love it. We make it very simple. A little olive oil with kosher salt and bake it. We did just tey a new recipe with it. It has fettuccine noodles, chicken, asparagus, and a lemon sauce. it was really good. Not sure how good it is health wise (it is made with heavy whipping cream) but It was really good. Kids hated it though. My son tried it but didn't like it. My daughter eats practically nothing. She does not like asparagus so I didn't even have her try it. I left some noodles and chicken out of the mixture and she eat that separately.

I also like green beans, green apples and green grapes. I only eat iceburg lettuce but I am working on eat some other leafy greens. It is a work in progress.
 
So, my drama filled life is continuing. Someone's space heater caught fire in my office over the weekend. Very scary but everyone is safe and the sprinklers apparently did their job. My house is finally dry and almost back together and now my work place is flooded. Ugghh. I already had enough work for three people and the damage is going to result in a fair amount of stuff needing to be redone because paper loses to fire and water and we aren't a particularly paperless office. Scheduled to go in for my salvage appointment soon so just going to answer the QOTDs now. Will try to be back to chat later.

I'm mostly WISHING! Not surprisingly, my WISHES aren't really working! I have kept up the no soda pledge though and my step average is 12,042/day so far so I'm proud of my compliance with those goals.

This is something I've struggled with since the beginning (and certainly brought up here before). I do so well when I plan. And I'm an über planner in just about every other area of my life. But I struggle with planning meals. And grocery shopping. And I really need to accept that three healthy meals and two snacks aren't going to magically appear from the sky every day. I've tried Blue Apron and wasn't a fan but maybe I need to try regular grocery delivery. I'll put it on my list of things to do as soon as my kitchen is finally fixed.

Ooh! I like green things! Brussels sprouts are my favorite. I slice them in half, toss them with about a teaspoon of olive oil, salt, and pepper and either put them on the air fryer or in the oven at high heat until the edges are caramelized and crispy. Add a little balsamic glaze and I can eat them like popcorn. I also really like roasted broccoli and asparagus.

In the warmer months, I like either a green smoothie for breakfast (Costco power greens, coconut water, pineapple, frozen berries, hemp hearts, avocado) or green juice for a mid-afternoon snack (power greens, cucumber, celery, carrots, lemon, Apple, ginger).

When I do things like plan my meals, I often have a giant green salad for lunch - spinach, baby kale, romaine, cucumbers, hearts of palm, avocado, lemon juice and olive oil topped off with chicken, salmon, or tuna.

Last of all are green snacks: Granny Smith apples and dill pickles (not together)!
 
QOTD/Mon. I don't sit down and meal plan but because I calorie count and wear a Fitbit I have a pretty good idea of what my burn for the day will be like and eat accordingly. Breakfast and snacks are typically the same things and lunch is usually a smaller serving of leftovers that I've measured out from dinner the night before. I keep the freezer and fridge stocked with reasonable choices so there isn't the temptation to eat just whatever. If I'm going out and about I pack a coolie with sandwich, snack, water etc and make myself take the time to eat it. I've found that keeping myself on an eating schedule goes a LONG way in preventing mindless snacking and impulse crap meals. If we are going to go out I will bank calories all week and do extra excercise to fit it in.

For excercise I keep a running schedule in my head with built in rest days. If something happens that throws me off schedule excercise or food wise I try not to freak out and just rearrange my week a little bit. One of the biggest things I've learned over the years is that if you have an off or crappy day, all is not lost. It's a small thing in the grand scheme and a bad day does not negate all the hard work you've put in.

QOTD/Tuesday Love me some veggies! We make huge salads with romaine, baby spinach and tons of veggies that my family will annihilate in two days. We eat broccoli and cauliflower at least three times a week. Love green beans, artichokes, brussel sprouts etc. Something I've been doing lately is taking the leftover protein from the night before, grab a steamer bag of veggies, add onions and peppers, toss it all in a hot pan with some fajita seasoning and wrap it in a whole wheat tortilla with a little sour cream or cheese. Great way to use up leftovers, get tons of veggies in and it's super tasty!

Got day 2 of Body Shred in and did just over 20,000 steps yesterday fitting in the McD treat pretty easily. I am super sore though, could barely roll over in bed, lol. An "active" rest day on deck, getting my steps in and a stretch video is the plan.
 
QOTD: Does avocado count as a green? If so it would definitely be my favorite!

I like salads and buy mostly cut up greens (usually Spring Mix), so it has a variety of different lettuces. If I use a single green in my salad, I usually go with baby spinich - so good!

For green vegetables, my favorite is broccoli. Most of my family does not enjoy it, so I'll either just steam a small amount for myself or eat it as a snack with ranch dressing. I also really like fresh green beans - these my family like too so I probably have them 5 times more often than broccoli.

I really like sugar snap peas for a mid day snack- aside from the taste, which I think is just fresh and clean and good, I think I really like the crunch of them - in a round about way, that crunch reminds of me crackers or chips.
 
Today is going to be a long day. After being up so late last night, I am exhausted today. My daughter has her standardized testing today and had a melt down this morning. This year she has started having some major anxiety over these tests. Thankfully her teacher is awesome and has already messaged me that she got her to eat something and is keeping her busy and calm. She grabbed her from extended care early to spend some extra time with her. I am supposed to have a meeting tonight but I think I might try to get out of it so I can go work out. I did so good when I was off of work and i really need to get back to it. i felt really good that week.

I just discovered brussels sprouts recently (growing up I never had to eat them), and they're so yummy! Thanks for sharing your prep method - sounds delicious!

I LOVE my Actifry, one of the best investments I've ever made. I probably use mine 3-4 times a week. So nice to be able to make crispy food with very little oil.

This is the one I have. If it were to quit on me tomorrow I would immediately go out and buy a new one. We make wings, fries, stir fry, all sort of things in ours.

I'm not really a lettuce gal... When we were in Waco the other day my SIL and I both ordered the same salad, she ate all her greens but I sware when I was done I had more lettuce in my bowl than when I started. A nutritionist showed me how to soften kale by massaging it with some sea salt first, which makes it more palatable, and I've heard that kale salads are best with some sort of fruit for sweetness, but I really prefer my kale ground up and hidden in a smoothie. My SIL gets romain to make salads and I'm going to start doing the same, as I've found I like the crunchy-ness.

I love having green beans at WDW, but don't make them at home, but I am going to grow some beans this year, so that'll change.

I'm so inspired by how so many plan out meals. I pretty much walk the grocery store aisles and get what suits my fancy at the time, but I know say, if I'm getting a package of greek pitas for pizza crusts, I'm going to be having pizza for a week+, till they are gone. I guess that's kind of a plan. I've been getting more frozen stuff at TJ's so I don't have to try and use up fresh stuff before it goes bad. I'll have to give planning more thought.

I would have actually had a good eating day yesterday, if I hadn't have succumbed to some left over Easter candy. I got myself signed up for my first Pilates class bright and early Thursdsy morning, looking forward to it and to being home!
