What a great Christmas recap!!! I didn't realize you were so close to the beach -- great pictures of you all there!
We are huge fans of Apples to Apples at our house, too. We have played a lot of that this vacation.
You do have a couple of dilemmas with park touring. I would say it depends on how much you plan on doing at Animal Kingdom. Remember it is truly the hottest park of all of them, and in the middle of summer, it may be absolutely miserable there. Even though it is probably my favorite park in regards to theming and atmosphere, I am limiting our time there in July.
As far as DHS and Epcot, how important is Fantasmic! to you? We love the dining options at Epcot, so always seem to spend the most time there.
Generally speaking I think AK is a one day park. I do however want to see the shows this time soo....aagh. I don't know.
We haven't seen F! since '04. Will anyone care if I don't make them care about it? Probably not. So it's really my issue I guess. I'd like to see it. Of course the new show at DCA might well tide me over since it will be open when we are there!!!!
Right now we have no dining at DHS (though Jeff thinks his mom would love PTC and I didn't include it in the options) so...
I don't know!

As a fellow West Coaster with jet lag issues, here's my take.
Know your audience. If there's a balance of "get there at opening" days and "get there whenever" days, then an AM EMH may work. I'm still learning 19 years later what works and doesn't. Here's how the first few days are scheduled for our upcoming trip:
Day 1: Epcot at 10am
Day 2: Free morning. Epcot at 2pm
Day 3: AK at opening.
This hopefully will allow everyone to get used to the time change.
I'm hoping the red eye and the universal days will adjust everyone's clock. A bit nervous since it NEVER happened on the last trip but...we will see!
What I do know is I had 2 restless kids am and 2 dead to the world kids last time...not an ideal combo. Thank the lord above for the deck at the FW cabin. One can only hope that the balcony at the YC provides similar refuge if needed. Or we just bail and get us some EMH TSM!

I had to do a double take where Santa'd lost his boxers....
Leave it to Evan to point that one out! Usually we just see the pretty boats lighted up and this year, finally made it to see the Christmas ships on the lake by our little civic club which was SO cool, all these boats lit up and choirs singing, the voices just broadcasting across the whole lake...magical.
The blow up decorations on the boats were a hoot!
