What is a good amount of days to spend to see everything if not most everything?? We have 2 kids under 11 and 5
 
We usually stay 10 days. That's enough to do most of what we want.

You're not going to be able to see everything in one trip. There's just too much.

We like to stay 7 nights - would prefer 8 or 9 but that doesn't usually work out. We have also stayed 6 nights. With kids that age you will be able to see a lot but it's impossible to see everything. Do some research in advance to see what things are on your absolute must-do list and work from there. If your planning a trip that will be a once in a lifetime thing then I would try to book as many days as possible. If you plan to return again in the next couple of years then a week long stay (+/-) should be long enough that you won't feel rushed.
 
Those with limited vacation time will often go with : Mk-2 days, Epcot-2 days, DHS-1 day, AK-1 day. This doesn't count the arrival or departure days. And I guarantee if you do this you'll be exhausted by the end.

We like 10 days at least. That allows us time for a day or two off at the resort, and time for a resort break most days. It's so much more enjoyable when you aren't trying to cram as much as possible into every day.

The hard part of this recommendation is all of us know exactly what we like, dislike, seen too often last few trips and haven't seen in awhile. We all know roughly how long it takes to see the things we are interested in. At minimum you want 1 day in each park. If you are there long enough, plan a second for MK. If your going to be there 7+ days then assume you'll want another day for whatever your family really enjoyed and want to spend an extra day at. There is also tons of things at the resorts to do that can take a lifetime to try them all so don't plan your trip around how much time you need in the parks, there's a ton of things you'll love outside of the parks too and have a little wiggle room to try and experience that, especially in fall/winter when there is resorts all decorated up for the holidays with special events and gingerbread houses, etc......
 
WE have been to WDW about 40 times and have not ween it all. Seven days is nice but we have stayed up to 14 days and would stay more if possible. WE do lots more than the parks though and like a slow pace. There are many nice places to eat and drink. If my children were the ages of yours I would not worry about food or drink. Regardless, have a wonderful time.
 
My kids are 10 and 7, and we've been going about once a year since the oldest was 2. We usually do 10 day trips, fly out Friday and back late the next Sunday. The minimum I recommend is 5 full days, 2 at MK and one for each of the other parks. HS and AK may not require a full day on future trips, but for first-timers there is a lot to see. If you can stay longer, it is better to have a full day off in the middle to relax at the hotel pool and maybe take in Downtown Disney. With kids that age you can easily spend 3-4 days at MK, especially if you will be going at a busy time and waiting in line for the characters. We usually stay off site at the Windsor Hills condo's so extra days add minimal expense. We tried staying on property last trip and after 5 days in one hotel room we all needed our own space away from each other. Others are fine in one room for a week or more. I wouldn't plan many sit down meals unless your kids are real foodies, maybe one or two with their favorite characters (Akershus!), but if you plan to do lots of long meals you will need more days in the parks.

We are coming April 23-May 1 2016. I always try and make use of arrival and departure days (since you are paying for them anyway) and book flights that get us to our resort (Poly) by 11am. Even if the room isn't ready, we can use afternoon fast pass options to get some value out of the day (early dinner for rope drop the next day). I book a flight out of MCO as late as 7-8pm so that we have the morning to hit a favorite ride one more time or to catch anything we missed. So 8-9 days is my best answer, but we have done aggressive touring in less than that too.

With under 11 and 5, some thrill rides might be out (especially for your younger child), so that makes touring a bit easier. If Tower of Terror and Rock n Roller Coaster are off your list for HS, you will be able to do everything in a day (or less). The same goes for AK if you are not going to do Expedition Everest and Dinosaur.

I would allow for 1 day at AK and HS. 2 days @ Epcot (assuming your kids have interest in the World Showcase). 3 days at MK with the ages of your kids. That allows for some breathing room and getting back to your resort at a fairly decent hour. If you are going to stay in a park all day, I would recommend a table service lunch (as early as possible) to rest your legs. Tour the parks at rope drop, table service lunch, and fast pass rides in the afternoon. That pace still feels like a vacation and can allow for some pool time and not feel like a forced march.

"See everything" sounds like a nearly impossible task. BUT for us, 10 days seems to be the sweet spot.
 
I would advise at least 6 nights, to see the main parks. 7-8 would be better,as you could also see downtown disney, or just swim at your hotel and relax part of your trip. (it's good to have some downtime in all that touring)
 
10 days ideally. We were just there for 12 and spent 1 day at US, and 2 half days touring colleges for 10 days of WDW time and we still didn't cover EVERYTHING (but weren't trying to since we go frequently). We never made it to a water park nor did we do any pool time (my kids are older so they just aren't into the pool time anymore). But 10 days is good. We once had a 9 night trip where we covered everything (both water parks too) and were pretty tired so adding a 10th day would be good.
 
7 nights makes for a pretty nice trip without rushing too much (unless you're going during a busy time of year). No matter how long you stay, you won't be able to see everything, but you'll be able to ride everything you want to in 7 nights at all 4 parks. This time we're staying 9 nights to have a more leisurely trip. We're 2 adults with no kids (well, actually our trip is 4 adults this time around). Kids definitely slow things down so I wouldn't want to do less than 7 nights with kids for sure.

Generally speaking, 2 Magic Kingdom days, 2 Epcot days, 1 Hollywood Studios day, and 1 Animal Kingdom day works out pretty well. Some folks might do 3 MK days and only 1 Epcot day rather than 2 and 2. The rest of the vacation time can be spent at Disney Springs (Downtown Disney), one of the water parks, at your resort, or finishing up your favorite park.
 
My husband considers one park per day with an extra day for doing our favorite park again or mini golf and DTD. He and the kids didn't like being there for more than 5 days.
We did get to see the basics with that amount of time.

I prefer 7 - 10 days. That builds in more relaxing and gives time to do more out of the park things. I have managed to get us to stay 7 days twice but I was the only one happy with that.
