Later times for Chef Mickeys

We found out a few days ago that WDW added spectro for our arrival day (Memorial Day). We always go to Chef Mickeys for dinner our first night and then plan on seeing Spectro after. When I originally made my PS for chef mickeys I made it later (7:10pm) because there wasn't a spectro planned for that day.

Now that they added it, I want to make my PS time earlier. So far they say there don't have anything earlier, just later.

Does anyone know if they actually hold some times like they do for the Fantasmic package and then open them up closer to the actual date?

I don't think so...I'm not surprised the earlier times are taken, most people with young kids want an early dinner. We ate a later dinner there in Jan. It was the night we flew in, we had an 8:50 PS and had a very relaxing (not a word usually synonomus with CM!) and enjoyable meal there. It was my dd's birthday and was it her request. The place was probably 1/2 full, mostly people finishing meals. We had a wonderful server who even brought an unbirthday cupcake out for my other dd and terrific character interaction too. Maybe have a snack to tide you over and do a late dinner after Spectro?
