If crowd calendars predict low to medium crowds (and turn out to be right), does that have much impact on being able to secure an ADR? Also, are there any particular places I should avoid Halloween night? (Birthday!)

It depends on what places you're thinking of eating and when (time-wise). In terms of the most popular venues (e.g., BOG, CRT, 'Ohana, Chef Mickey, etc.) there is really no time of year when the crowds are low enough that walk-ups will always be admitted without worry. That being said, if you're flexible about when you go to eat (i.e., eat early or late) and where you eat, then you can probably find walk-ups (it might just not be a popular venue or at a popular time).

I've gone several times during late October and while crowds are manageable, many of the in-park and Signature dining locations were turning away walk-up guests. So, if you have places you want to eat for certain (or specific times), I would make ADRs.
