I would like some suggestions
Our last day at WDW would be a Saturday - per webs-sites it is a very busy day in the Parks
We would have already visited WDW in the Parks for 6 days with a Park Hopper

Which resort tours should we do on a Saturday ?
We could Minnie Van to the resort for the tour if necessary
Still less expensive then paying for a night at a Deluxe

At AKL I found - Can anyone do the tour or only guests at AKL
Sense of Africa features a multi-part, three-hour tour of Animal Kingdom Lodge as well as a hearty breakfast at Boma. Before having breakfast, guests learn all about the resort’s rich backstory – from its architecture to fun facts about the hotel – from the cast member giving the tour. After a break for breakfast, you get to go backstage for behind-the-scenes animal encounters. All the while, animal care staff members will guide you through the experience and tell you all about these wonderful creatures. Taking place on Tuesdays and Saturdays, check-in starts at 6:46 a.m., with an immediate departure at 7:00 a.m.

I also found at CR - BUT do they do the tour on a Saturday ?
Escape to Walt's Wilderness: Meet at the Contemporary Resort's Marina. Hop aboard pontoon boats for an eco-history tour of Bay Lake as you travel to Fort Wilderness Resort & Campground. From there, go to the shore of Marshmallow Marsh for breakfast on the beach. After you've had your fill, a horse-drawn wagon will take you to Settlement and Pioneer Hall, then you will hike into a clearing in the woods for an archery lesson. Once you've mastered the bullseye, head to Tri-Circle-D Ranch horse barn to meet the Walt Disney World horses. A PhotoPass photographer will be available and the photos will be available on Memory Maker

Not sure if this is important to you, but you could do the Ft Wilderness one on your own without the tour. Grab a breakfast wherever you want (including the Fort), sign up for the archery lesson (we have done this and it's fun) and then take a look at the horses (if you want to). You'd miss out on the horse-drawn wagon.

Escape to Walt's Wilderness was discontinued about 4 years ago. You may want to search tours on the Walt Disney World website to get up-to-date information on what is currently offered.

Sense of Africa is typically offered on Saturdays, but it's $250 per person. If you are a party of more than one person, that is definitely more expensive than staying a night in a deluxe.

I agree with holden, if you aren't interested in paying a ton of money for a tour, you could do a resort tour on your own. In addition to holden's suggestions on touring Ft. W, you could add on a tour of WL. If you visit the front desk or concierge at WL, you can ask for a hand-out which explains the architecture of the lobby plus a description of all of the artifacts displayed. You can also walk over to the sitting room in Boulder Ridge Villas to see some of the trains Walt himself used in his backyard railway. If you want something presented by a guide, WL also typically offers the "Wonders of the Lodge Tour", Wednesdays through Saturdays at 9 am. It's free to whomever arrives and typically meets in front of the fireplace. https://touringplans.com/blog/2012/02/17/free-tour-series-wonders-of-the-wilderness-lodge/

What time are you leaving that day? Will you be taking Magical Express to the airport? If so, Magical Express generally picks up about 3 hours prior to your flight time for domestic flights. If you're relying on Disney transportation, I would allow about 75 minutes to get from a resort, to a park as a transfer point (if necessary), back to your resort. So with all this in mind, consider how much time you actually have to allow for certain activities on your check-out day. This is a non-issue if you're not using Magical Express. You could also give yourself more time by taking Minnie Van or Uber/Lyft instead of Disney transportation and/or Magical Express. Keep in mind that Minnie Van can be pricey, especially to the airport.

We always take a later flight out and use DME, so we generally need to be back at our resort by 3-4pm. If we're not going to a park, we'll sleep in a little and use the time before check-out to pack up so we don't have to waste time on our last day to do that. After we drop our bags at Resort Airline Check In, we'll then go to a resort for brunch or lunch. Chef Mickey's has a nice brunch, and you could kill some time by doing a monorail crawl or visiting Fort Wilderness from there. Trail's End at Ford Wilderness also has a good breakfast buffet. Riviera on the Skyliner has a character breakfast, and it would be fun to ride the Skyliner to the other resorts on it to check them out. You can also ride it to the Epcot area resorts and tour those as well.

Although its not the suggestion you're looking for, will you be doing Disney Springs on another day? If not, a Saturday morning/early afternoon is a decent time to go. There's a few good breakfast spots and a lot of good lunch spots. We usually go to Disney Springs two or three times on a trip because there's so much to see and browse. You could also tour the Port Orleans resorts, OKW, and/or SSR and then easily get to Disney Springs from there.

I think on our last day - I will plan a 7 AM guided fishing boat - DH loves to fish - I hope they do not mind if DW does not fish - you can get the boat from some resorts
If we get YC - do brunch at about 9:30 am - 10 am at The Character breakfast at the BW, or Cape May if we can not get the BW one with Ariel and Flynn
If we do the fishing from the CR - we could do brunch at 1900 Park Fair, or O'Hana
Then back to the resort .....
