* KIWI * anyone? (need recipies! :)

I love kiwi and because its really nutritious i'd like to use it somehow other than *straight* ~ mostly to get my family to eat it :)

I know i can go on line for recipes but wondered if any of you great chefs had any personal favorites?

Would they like them in smoothies? I like Strawberry-Kiwi-banana but you can use all different kinds of combinations.

Just put vanilla yogurt, fruit and some juice in a blender with ice. I hide all kinds of stuff in smoothies. Serve with "bendy" straws for extra fun.

I don't know if you can bake with kiwis - I've always eaten them in fruit salads and cold things.

Aloha Cheesecake

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup vanilla wafer crumbs
1/4 cup margarine -- melted
16 ounce cream cheese -- softened
1/3 cup sugar
2 tablespoon milk
2 large eggs
1/2 cup macadamia nuts -- toasted
8 1/2 ounce crushed pineapple -- drained
1 medium kiwi fruit -- peeled and sliced

Combine crumbs and margarine.
Press onto bottom of 9-inch springform pan.
Bake at 350 degrees F for 10 minutes.
Combine cream cheese, sugar and milk, mixing at medium speed on electric mixer until well blended.
Add eggs, one at a time, mixing well after each addition.
Stir in nuts. Pour over crust.
Bake at 350 degrees F. for 45 minutes.
Loosen cake from rim of pan. Cool before removing rim of pan. Chill.
Before serving, top with fruit.

Ben and Jerry's Kiwi Ice Cream

6 Ripe kiwis
1 cup Sugar
1 Tbsp Sugar
2 large Eggs
2 cup Heavy or whipping cream

Kiwi Ice Cream is one of Ben and Jerry's more exotic, subtle flavors for
the true connoisseur. Peel the kiwis and mash them in a bowl until pureed.
Stir 2 tablespoons sugar into the fruit, cover, and refrigerate 1 hour.
Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes. Whisk
in 1 cup sugar, a little at a time, then continue whisking until completely
blended, about 1 minute more. pour in the cream and whisk to blend. stir in
the kiwis. Transfer the mixture to an ice cream Maker and freese following
manufacturer's instructions. Makes 1 quart.

LOL, good idea! I hide food too, like putting baby food carrots and squash in my spaghetti and pizza sauce. Makes me feel better they're getting more nutrition, and they're clueless! ;)

If you put them in smoothies for people other than your immediate family make sure you let them know because people with allergies to latex should avoid eating kiwi.

I always eat it sliced up. Now I'm off to see what recipes I can find. Thanks for the inspiration!
