JoJo's Big Top Cheese Quesadillas

(a nod to the Playhouse Disney show JoJo's Circus)

Just pick up a couple of different kinds of soft tortilla shells (red corn, yellow corn, blue corn, flour) and some shredded mozzarella and cheddar cheeses. Starting with whatever "color" of shell you want, butter one side of and lay it face-down in an unheated frying pan. On the non-buttered side, sprinkle a layer of the cheeses. Don't worry about getting the cheese right up to the edge of the tortilla -- when it melts, it'll spread itself out. Next, butter one side of the same color tortilla and place it on top of the other in the pan, buttered side facing up. Turn on the stove and grill up both sides of the quesadilla. When it's slightly browned and kinda stiff, flip it out of the pan and set it aside to cool. Repeat the above steps with the other kinds of tortillas.

After they're cooled, slice them all up into triangles (think slices of pizza). You can probably get anywhere from 6-12 wedges out of a tortilla depending on how big your shells are and how thin you're slicing them. On separate serving plates, arrange different quesadilla wedges by alternating colors. For example, if you used four different kinds of tortilla shells (red, yellow, blue, flour), you can create two blue and yellow "circus tents" and two red and white (flour) "big tops". After you're done arranging all the quesadilla wedges, put little bowls of salsa, nacho cheese or sour cream where all the points meet in the center of each plate.

Sorry if this was confusing!!! I just came up with the idea for these right now and am having trouble explaning my vision. :faint:
 
We make quesadilla's all the time, but an easier way is to....

Use 1 tortilla, put cheese on 1/2 of it. When the cheese is melting, fold the tortilla over...its much easier than trying to flip 2 tortilla's held together by sorta melting cheese...

I got one (kind of as a joke) for my DH for Xmas a couple of years ago, and he loves the darn thing. As a mattter of fact, when moms out, guess what the kids have for dinner. lol. It makes em' quick and pretty tasty at that. :)
 
That sounds adorable TrueBelievers! :teeth: And I understood exactly what you were saying. ;)

I remember the days of "creative lunchmaking" when the kids were really little...cookie cutter sandwiches, crazy names for things like "Mexican Chihuahuas" (refried beans spread on a tortilla, a sprinkle of cheese & a hot dog rolled in it then wrapped in plastic & nuked LOL), hiding things inside finger Jello, etc.

BTW - When I make Quesadillas I don't use butter, I just use my Misto to spray olive oil on the non-stick pan before I start. But we like the "scorch marks" on them...I'd think for the kiddos (and to preserve the JoJo's theme) you'd want them to be "plain".
