In looking at the disney web site, I see a number of things that my young boys would love to do (including shows.) Is there any publication which shows the days/times that all of this "stuff" happens? I would like to be able to plan some of our visit, Is this a pipe dream?

There are many books that specialize in WDW, like the Unofficial Guide to WDW. This book lists and rates hotels in and out of WDW, restaurants and rides, shows and other attractions at each park. It also has touring plans that help you plan your days. There are also many websites that can give you a lot of the same information like this one and allearsnet.com

If you're looking for specific show times, you won't know for sure until about a week before your trip. Parade and fireworks schedules appear on the official Disney website about 6 months ahead of time.
