Is it only sit down in main dining room at dinner or is there a buffet restaurant avaiable to stop and get food? Just wondering in case we want to have a quick buffet meal that can be taken back to the room.

None of the buffets on the Disney ships do buffet style for dinner. Except on rare cases (late port departure times, for example). Dinner in Cabanas/Beach Blanket is a sit-down table service with a menu of selected items from the menu(s) available in the other MDRs that evening.

And there's no dinner service there the first and last nights of the cruise.

If you you want quick - there's the quick serve locations on the pool deck. Or room service.

For the nights that Beach Blanket is open for dinner, can you stop by and dine there at any time during dinner hours? We have late dining, and I am not sure our son will be able to make it that long each night. I am wondering if Beach Blanket is an option for a sit-down meal for those nights when we need to eat a little earlier.

Yes.

The Disney Magic had dinner buffets in Europe on a few nights on my recent cruise, photos in my blog, link below. So to say none of the Disney ships have dinner buffets is incorrect, I eat there in St Petersburg at 9 pm and gave the photos to prove it. It had it a few nights, so not rare either.

That was likely because it was a cruise that had late-arriving excursions. Unless you're in Europe that probably won't happen.

That's what we were told. We came back from a late excursion in St. Petersburg. We'd had to skip dinner because we had late dining and weren't able to eat between our daytime and nighttime excursions. We figured we'd just grab something on deck and then saw that Topsiders had the buffet open with full buffet. They said that it was because of late excursions. It may have been open other nights, but I didn't see it.
