Is there anything in WDW that I won't be able to use gift cards for?

I'm going to target tonight to get a bunch of gift cards for our trip. I'm not on the dining plan, so i'll need alot. Is there anything you can think of that I can't use a gift card for? I'm trying to decide how much to get. Can I pay my dining tips with gift cards?

Some food carts only accept cash.
