Is there a limit on how many fastpasses you can make with AP?

We are AP and are headed down for 7 nights 8 days in January. We already made out fastpasses and all is good! We decided to fly down one night prior to our resort stay and are staying offsite with family for that one night. We are planning on going to Epcot that night and tried to make fastpasses and it wouldnt let us....Why is that? Have we exceeded the number of days we can make FP? Is it because we are not staying on site that night ?

YUP. It can be a bummer for longer trips, but I get it.

HP, we can make FP reservations for more than 7 days *IF* all of those days are part of an on-property stay, right? (In other words, we're not worse off than a guest with a regular MYW ticket, I would presume.)

Right. OP's problem is the off site time

Yes. It's 7 days max, unless you have an onsite reservation. Then, it's for length of stay. We did 10 nights last July. No problems with FP for all 11 days (counting arrival day)

Oh, and I'm blanking on it now but there may have been some other strange glitch if you book 2 on site trips within 60 days but I'm blanking on the particulars now. Seems like I ran in to that but things are fuzzy

Yeah, I have gotten to where my shorter trips usually on property but when I stay 10 days it is usually a week at a condo and then some hotel days before and after ..... on site is not a problem. But we really haven't had huge issue with good planning.

Honestly other than a couple big ones not seeing a big problem. DS was just there last week, on Tuesday with the park pretty crowded, they used their 3 FP+ left park to eat dinner, then from 9 pm to close they rolled 12 more FP+, granted a few were shorter lines but they did get mountains and even Peter Pan.
