We're a large family and have found that it's almost always cheaper to rent a vacation home and stay off-site, even with car rental and parking fees. Last trip we stayed here:

It was clean, comfortable, and close to shopping.
I'd do at least a 2 day park to park ticket for Universal/IOA as you won't be able to ride the Hogwart's train without it. We've been during busy times and have found that the lines aren't too bad until around 11 am so if you get there for park opening you can get quite a bit in before the lines build.
