I always make homemade caramels for Christmas. I have the weekend free with nothing to do. I'm worried though that this weekend is too early. They won't be as fresh as if I wait a week.

Have you guys started cooking/baking already, or are you waiting?

DD and I are starting this weekend. Some things can be frozen others, if sealed really well, will be fine in tins. And, well, there are some things that won't survive a day once DH and DS find out they are in the house! LOL!

Enjoy your baking!

Not too early for me. I am making the beef jerky tonight. It has been marinading for 2 days now.

Not too early.
I start Christmas baking on Veteran's Day. Starting with the cookies and breads that freeze well.

do you think caramels and turtles would be ok Meriweather?

How about sharing the caramal recipe? I had some homemade ones last year and they were to die for!

I'll try to start today. Make a few batches and refrigerate them. Bake them tomorrow morning, before I leave for the day.

They need to be in the mail by Friday, that gives me one week. Hope to make at least 10 varities. With such a busy weekend planned don't think I get much done over the weekend, but come Monday the house will be toasty warm with lot's of wonderful smells.

As for baking too early. When cooled I put them in airtight containers layered with wax paper and paper towels, then put them in the attic. With the weather were having, it sub-zero up there.

I'm at work right now, so I don't have the recipe handy.

I'll try and remember this weekend to post the recipe - I would be more than happy to share it.

Just a warning though - if you make the caramels to share with others, you'll have many requests for them the following year :)

I made caramels, but I have frozen some someone gave us. It worked fine.....and if you can freeze those, I see no reason why not turtles. Those never last long here! ;)

Please post both the caramel and turtle receipes. I just bought a huge bag of pecans from Sams and tutles sounds so good. TIA.
