Is It Possible To Have 2 Out Of 3 On DDP If

We're a family of three that are light eaters. We can finish regular sized entrees, but feel really over stuffed / bloated afterwards.
We can eat a light pastry breakfast, a late lunch, then sometimes we don't even need dinner besides a shared meal.

So is it possible to make the room reservation for one adult one child with a dining plan and mom non really registered to the room?

I was just trying to budget our trip if we used the Stay, Play, & Dine if it's available in January.
 
I don't know how you could stay on a room without being registered. You wouldn't get a magic band to get into the room or for tickets. We never do the dining plan but it doesn't seem doable to me.

If we could do this, Mom would get separate Park Only Tickets.

Though it does seem more trouble than its worth.
Just thinking of money saving scenarios as we wait for the 2018 bookable rates open.

You would only be able to do this if Mom wasn't on the reservation, but you added her at check in at the front desk. She would then not have the Dining Plan. She could get a magic band at check in. However if you are planning to use Magical Express Mom would not be registered so would not be able to use it.
 
Also wouldn't be able to book FPs for mom at 60 days. Would have to wait until 30 days out and may not be able to coordinate everyone for the most popular rides.

If Stay, Play and Dine is the best discount for you, just plan some signature meals to use up the credits. As long as you're not at a buffet or family-style AYCTE, the majority of WDW restaurants will let you use just one credit and share. At some point, you'll run out of kid's credits, but the kid's meals at a la carte places are fairly inexpensive or get a couple apps and everyone share. If you still have credits, spread some pixie dust and buy someone else's meal a night or two.

This is actually not the case. Resort guests can include non-resort guests in their 60 day FP bookings. Only way this wouldn't work is if mom wanted to make a FP by herself.
 
I would use one CS meal and a snack or two for breakfast. Then share the remaining 2 CS meals for lunch and each have a TS dinner. Extra snacks can be used to take treats home.
 
We are the same and never found the DDP worth it since the changed it from the initial set up (1 snack, 1 CS and 1 TS per person per day, which included appetizer and dessert). We could never finish then either but the leftovers we took back to the room used to tide us over when we stayed off site Fridays and Saturday nights.
