So. What did everyone have for dinner tonight?
My issue this past week has been planning. Normally, I whip together dinner no worries. But honestly, if I'm not going to eat my emotions in candy bars - been there, done that - I'm going to have to feel them. And that makes me sad and tired and not motivated to cook. Like, classic I Can't Deal. So today I went and stocked up on some stuff.
Canned Progresso soups - for lunch, and first course dinner. Low in fat, low in calories/WW points, and a serving of veggies.
Frozen shrimp - great diet food.
Three of these frozen shrimp and rice/pasta meals. There was a deal at the local store on these, and they each came out to be 5 WW pts for a meal - about 270 and 290 calories, and that's with protein, veggies, and starch. Just heat and serve.
Frozen veggies - the Steamfresh kind.
Boca Burgers - on Erika's suggestion, for quick meals.
Smart Ones - just a handful, on the days when I'm alone and even lunch is too much. I won't do these for dinner, but lunch is okay once a week or so.
So. Any other suggestions? For super fast, no brainers? Meals that you can make in 5 minutes without any heart or soul? You know, the I'm Giving Up on Life meals. But low fat, low cal. The stop gap between cooking for real and Taco Bell.

Just had stirfry tonight..easy veggies..peppers, sprouts, pea pods, onions, mushrooms, rice noodles, cut some chicken up ahead of time and voila...you have a meal...
"Chicken cashew salad"
with cashews to taste/celery/red grapes/chicken/mayo (whatever kind you like)...it is really easy and good and no noodles so low carbs...
Egg salad/hard boiled eggs
sandwich meat..cheese slices...subway fixings...
And I love Boca chicken patties....my favorites are the spicy ones...just by themselves ...no buns...awesome..![]()
Liz - i'm totally buying star stickers to start putting on the calendar. That's a great idea and any little bit of motivation helps!
SO i received excellent news today. Bruce has worked his way up the food chain a bit and has enough seniority to go on day shift with every other weekend off starting sometime in early february. I'm so excited!!!!! It's not permanent as he is on a small team working on a new prototype thing for their program, it is on hiatus temporarily, but when it goes live again he goes back to B shift, but hey, i'll take what i can get while i can get it!!!!!
So i'm a happy girl today![]()
Tracked everything today, still have a few points left and i'm feeling a little bit munchy so i may have to go on a snack scavenger hunt....
Liz - I swear this changed my eating life. Love fajitas. Sometimes don't have the time or energy. I'm such a liar with me it's lazy.![]()
So I found a quick way. So I use my favourite frozen patties - beef, chicken, can be tofu.

While they are cooking on my contact grill - I heat up a frying pan throw in mushrooms, onions, peppers - whatever. Frozen garlic cube.
While that's going - heat up tortilla in microwave. Sometimes grate cheese.
And voila - five/six minutes it's all done at the same time. And so yummy. Avacodo - salsa anything. But I try to keep it simple as I can. So fast.
Enjoy - you must so tired/wiped Liz. Think about you all the time. And happy to see that you are thinking of support for all that you are going through.to you.

Just bought Boca patties today! And stir fry. See? I never think of simple things. Really. I cook so much I forget the simple stuff like stir fry. Hmm. Stir fry.
Liz - Bruce is an LMSW (social worker) and he currently works on the national veterans suicide prevention hotline for the Veterans Administration here in Canandaigua. Comes with some nice federal perks, but sometimes a sucky schedule, i'm excited even if he is only on days for a short while, i MISS him!

Yes! And you can even get the stir-fry ready vegetables. Already pre-chopped and ready to go. I get the fresh, but they have frozen too. And with the frozen, there is also a package of frozen stir fry sauce...so you really just throw it all in the pan and heat it through.

Melissa - that's so awesome what you are doing for that family. My father is a fire chief so we would see that type of thing often (and this year was an awful year for fires around the holidays it seems). I'm sure the family appreciates your gestures more than you know!!!
