in room sitting?

We're contemplating a cruise next April (first time!) with our two DS's (3 and 6 at the time of the cruise).

Part of the motivation for the trip is to celebrate our 10 yr. anniversary, so we're interested in a few nights out alone. Yes, the kids deck is available (Oceaneer Club) until midnight, but we have concerns that our older son won't enjoy it (not the most outgoing in some situations) and our 2 1/2 yr old may not be potty-trained by then.

So, is in-room sitting available on the cruise? If not, what have others done in a similar situation?
