He was chosen to bring a bite size vegetable "dish" for their tasting bee next week, and I have no idea what to bring! Any ideas on a kid-friendly veggie dish? It can be anything at all that might taste good to a class of 1st graders. ;)
*the reason I mentioned "hidden" is because my 7 year old is NOT a veggie lover!*
 
This vegetable is by no means hidden, but it's the first thing off the top of my head that might be worth considering. How about sweet potato fries? While some kids, including one of my daughters, won't eat a baked sweet potato, they'll eat them in the form of sweet potato fries. Every kid likes a fry, so sweet potato fries just makes it healthier. They're easy to make, they're handheld, and they won't be a messy dish. I'm a teacher, and our school recently added sweet potato fries to our menu occasionaly. Many kids have found a new liking for this vegetable.
Sorry it's not a "hidden" idea. I'll have to keep thinking on that one.
 
How about some sort of dip - or houmous? Either with raw veggies or breadsticks?
 
It's not finger food, but you could serve it in small cups. I made mac and cheese a few weeks ago and substituted pureed hubbard squash for about half of the cheese! I cought a box of frozen pureed squash, cooked according to package directions and put half of the box in a pot. I added a little milk and a little butter, then sharp cheddar cheese a few sliced of american. Then added the macaroni. No one knew!
